I mainly shoot in aperture priority mode also. It’s good to know how your camera works, but it’s also super important to get the shots you want. It’s not that often I need a super fast shutter speed, as long as AF is fast, which it is, then AP mode is my favourite setting.
I'm somewhat of a beginner to photography (with a dedicated camera) and I found manual mode helpful for understanding how the exposure triangle works. But like you say, it's nice to then be able to actually get shots at opportune moments with some of the dials set to auto. I think the Aperture priority mode is nice! I got a shot of the local corn man setting up while riding my bike with my XT-50 and I don't think I could've gotten it with both of us on the move without flipping some of the dials to auto mode.
Manual is GREAT to learn your camera, all the ins and outs of the exposure triangle like you mentioned They are both great for different reasons, glad you were able to get that shot!
NIce tip bro! thanks for that, A quick question, should I have to change and setup the auto1 paramaters for each recipe? Or there a way to setup once for all of the recipes installed? many thanks
howdy! yes I only have it set to auto one, whenever you change settings for each custom recipe it sticks to that custom slot I just leave them all in auto 1 however you can in theory save custom setting 1 to auto 1, custom setting 2 to auto 2, etc

I've been shooting AP mode the majority of the time while using this camera, seldom do I switch into full manual only if I am trying to go for a super creative shot like slow shutter drag, waterfall blur, or capturing a night scene with very low ISO

Yep the lens hood is to help with sun flare, i recommend getting one, they do help and it just looks cool haha
