Bobby was so honest about what he didn't know. I love that a "celebrity chef" took the back seat and let Esther be the authority! These two have great chemistry and I would love to see them do more food tours!!
I personally disagree. She doesn't ask any questions a regular customer off the street wouldn't ask. I know how accomplished she is, she seems super under-utilized. I do not think she is contributing to the show. IF I just wanted to hear someone says "mm hmmm" and repeat ingredients listed by the guests, I would just watch the guets.
It's really refreshing to see a successful chef so open, humble and honest to a new cuisine that's not as well known in the western side of the world. I'm fascinated with all the different spices and techniques of Chinese foods, I often watch a lot of @BlondieInChina 's videos where she ventures to different provinces and tells about all the different flavours.

Bobby's comment about being the best that you can be at a skill set is the best advice you can get. Jobs come and go, but your worth as an employee is all about your skills and talents. Being the best you you can be is always going to reward you. Loyalty to an employer may get you benefits, but being the best you will ALWAYS pay off. And i would also like to add, the wider the skill set the better. Knowing things is it's own reward, but it tends to pay off in making you a more rounded person.
Being from Xi'an, I'm really glad that our food is getting some love! We're in a very unique place geographically and were formerly the capital of China. What Jason said about the food being a tapestry of the history was so beautiful. It's hot but so so flavourful. The vinegar adds so much dimension to the mala.

Bobby Flay was so saturated on the Food Network. Eventually, I found myself rolling my eyes every time I saw him because he would over-explain food to middle America every time he opened his mouth. He's a talented chef, and I wanted to hear him talk in-depth about the food he cooked or ate. I enjoyed this video. He has knowledge about what he's eating (I have a feeling he knows more about Korean food/chilis than he's letting on), but he's on someone else's show and wants to just go for the ride. He's the most personable I've seen him in 25ish years.

This is a really good show! I'm just going through, checking things off, watching you all add depth to my education. There's a lot I already knew, but it's lovely to see it in practice, at the top of the craft, somewhere else. We have pretty good grocery stores and restaurants where I live, as well, and my friends and I dive pretty deep both into the spice and the variety. I'm sincerely looking forward to the next one, it's like being out with friends and talking about the same things we'd talk about.
Fascinating !!! So good to see Esther Choi introduce Sichuan cuisine ! Next time, they should try the stalls on the first floor food court. That's where the MASSES go ! If you want a truly authentic experience, you just have to go where the locals go, period.
Flushing is awesome! Manhattan was mostly Canto when I was a kid, but a lot of Taiwanese moved to Flushing, so you heard a lot of Mandarin there...with a Taiwanese accent, of course. Now you have people there from every part of China practically. Food is only the beginning.
man I love your show. As a chilli enthusiast, and a guy who loves cooking.....this is great for me. (I was watching this while eating a tom yum soup I just made to perfection! easily restaurant grade level, with 1 scotch bonnet chilli to spice it up)......yummy!
When I lived in Greenpoint and you opened on Manhattan Ave. , I stopped ordering from everyone else. Your quality spoiled me and I LOVE it. When I got out of the hospital on Monday after 2 months (and I had to be readmitted on Thursday, nothing to do with you), the first meal I had was at your place about 45 minutes before you closed. When I get back out of the hospital hopefully soon, I’ll be having my first meal there again. Just brilliant, wonderful food.❤️

Szechuan peppercorns!! I only recently discovered them, from this pretty decent restaurant near me. I love spice but this was something completely unique for me. I was ecstatically on fire the whole time and can attest that it IS an addictive sensation in the mouth. I really enjoyed this episode!
I've actually had this dude's Xian cookbook for a few years. It's great. Made this exact dish from it...and biang-biang noodles without the beef many times. Haven't made the cold noodles yet. Good cookbook to pick up.

Legit. I lived in China for most of a decade, in Xi’an for two years, and all of this checks out. The only thing I would add is that I’ve only seen 麻花 at Xi’an hotpot. It’s like a Chinese pretzel, sort of. You can get them as snacks all over China, but only Xi’an people regularly serve them with hotpot. I would also like to have seen 杨凌面条 and some other dishes specific to the province, like 肉夹馍 and 羊肉泡馍 but maybe you’ll check them out in another episode. 😊
Oh man, my mouth is watering for those Xi'an noodles! I remember walking out of Nan Xiang in Flushing (corner of Prince and 39th) late at night and seeing that skewer cart kitty corner from the restaurant. That there were people still waiting in line there at 2 AM was amazing. Too bad I was so full already. Xing Fu Tang's boba is legit. (side note, the first time I had frog was at a Korean restaurant. But I don't dispute that frog is more of a Chinese menu item than it is Korean.)

Oh, my God! I've been to this hotpot restaurant just on the 2nd floor of the New World Supermarket in Flushing: Xiang Hotpot. the taste is very special and should definitely be tried!🤣
Chinese chile heat definitely has that lovely tingle on the tongue that you don't get with any other kind of spice/heat, at least none that I've ever eaten. I finally found a Szechuan place here locally that I adore, after just assuming Orlando was a Chinese food desert two years along.
