In my experience (and correct me if I'm wrong) Bears are mostly alone, or max in pairs; Boars are usually 3, sometimes 4; Wolves are usually 3 as well; Wisent I'm not sure, 3 was max I saw, but I don't have much experience with them; and Deer I've never seen less than 5. So with that in mind a Deer spot (46 XP) will give more XP than a Bear spot (18-36 XP), and also more XP than at least half of the Boar spots (38-50 XP).
Your assessment jibes with my experience. Regardless, maxing out hunting is a grind. Just found out, after playing on and off for over a year, that selling livestock is a great help in leveling Diplomacy; expect 50 points per animal. I also enjoyed Ubermiley's rabbit comment. LOL!
In fact the best way to increase hunting is using traps. You can increase traps numbers to be able to have 6 of each, then you put them close to a building you go often, like the storages, every time you go nearby check the traps. Using only rabbits birds and mouse you have 18 traps, then you just keep playing, building, farming, etc and the hunting will be increasing as you collect the traps. Of course you can also hunt if you want to increase it faster, but if you do it in the beginning you will see that it’s not necessary

I have looked into it now. The fishtraps doesn't give hunting skill. They give Survival skill and survival technology. Video about survival coming in the future. Just wanted to let you know. :)
No. You can only get skillpoints from doing stuff yourself. Villagers give you techonologypoints. In this case, hunters will give you survival tech. :)

though you must take into consideration that herbivores run away from you while aggressive animals come to you straight
