Flat VS Conical Burrs for Espresso - The Turin Showdown

  • Well less of a showdown, and more of a comparison between the two. It has been a long time since I have done a side by side shot of espresso on a conical as well as a flat burr. Today I used the DF64V from Turin, as well as the SK40, also from Turin. I watched a video the other day comparing the Niche Zero to a flat burr and they said they taste almost the same. I say that video is wildly wrong! I could pick these out in a blind test any day of the week. Not saying one is better than the other, because they both have specific beans and brew methods which they will excel at. They both deserve a place on my coffee bar!

    I have the DF64E and added the SK40 for pour over. The DF64E is incredible for espresso. After seasoning, almost no static. The Tight adjustment allows perfect dialing. I seasoned my SK40 with 5 lbs of beans. I don't know if it's is that or a newer shipment ( beginning of February ), but my SK40 is dead quite.Almost no sound without beans and less the th DF64E. It does require more WDT than the DF64E. That mat be due to medium roast for espresso and light for SK40 pour over. This is a killer combination.

    Can you please explain why you don't recommend going below 1200 rpm for espresso?

      #1 the grinder just won’t produce enough torque at a certain point, not designed for it. #2 you won’t gain much because the grounds are already so fine the lower RPM on a flat grinder for espresso, you won’t notice

    You preferred time is ~50 seconds like the conical shot? Is your espresso machine running at a pressure lower than 9bar to accommodate that?

      ? I run 34g in about 30 seconds most of the time. Machine is at about 9 bar.

    Is df54 perform same as df64?

      It’s good but not the same, so no does not perform the same

    I can taste the same difference in Eureka mignon vs jx pro. Night and day.

      ​@@5Hydroxytryptophan Mignon, the flavours are more spread out. The conical is rounder and more mixed together.
