    Pro Tip: Whenever using eggwhites, separate the egg BEFORE you add anything else, thus if you mess it up and get some yolk in your shaker, you dont ruin all the expensive spirits

      Yes most “sours” use egg whites for a frothy texture, but it doesn’t make it taste like eggs.

    Hi Steve, first of all like your vids, keep on going👍👍
    I see a lot of vids for cocktails wherein you use egg whites. Do you recommend using eggs from the fridge or eggs on room temperature? Is/could there be a difference?

      Hi! glad you enjoy the videos! Although there is the option to store eggs in fridge or pantry- we are definitely a fridge based family here (it gets quite warm in SA) and as you are ingesting them in a raw form I'd recommend fridge eggs.
      If you're not a fan of the egg white you can use a foaming bitters or aquafaba (chickpea juice) as other options that still offer you great texture.

    I always wonder if you should strain a foamy drink. I feel like some of that rich tasty foam ends up getting stuck in the strainer.

      Try a reverse dry shake if you want more foam: first with ice, then without. Then you can just do a dirty dump (pour into glass without strainer) and keep all the foam!
      Remember to shake with ice until chilled and no longer, we want as little dilution from the ice as possible.

      Allows for the foamy texture on top. Similar to a meringue ! Silky mouthfeel but not a whole lot of taste, like you don’t get any hint of egginess like you’d think.

      Not usually for a fizz. Just make sure the glass is ice cold and shake with plenty of ice, and you should be fine.

      A fizz needs the extra volume for the soda water and resulting foamy head so definitely leave out the ice

      Yes.. silver = egg white, golden = egg yolk, Royal = whole egg.

      Gin fizz = no egg white
      Silver fizz = egg white
      Golden fizz = egg yolk
      Royal fizz = whole egg
      Although it’s pretty common to call one with egg white a “gin fizz” also..
