They won't just say verbally to you that you are barred or sent back, they HAVE to provide written proof they are doing so. Once you are excluded entry, it does NOT matter if you even change nationality and passport - you, as a person, are EXCLUDED.

In my twenties I used to travel internationally with two passports. I had dual Spanish and Australian citizenship. I would leave Australia with my Aussie passport and enter Spain with my Spanish one. Then when I left Spain, I used my Spanish passport to leave and my Australian one to enter Australia. Never had any problems.

There's nothing wrong with using two passports. I use one to leave Australia and a different one to leave Europe (as I often stay longer than the Australian one allows). In this case she overstayed her visa in a country that she did not have a passport for and tried to get around it by using another passport which again, was not for the country she was visiting.
Having visited many places without having to visit consulates or embassies before, getting visa waivers or visas on arrival is very valuable to me as an avid traveler. Having a strong passport due to the sheer luck of being born in the right place is a privilege. Whenever I travel, I take great care in ensuring I am well prepared with all the documents and that I don't overstay. I would not want to be put on an entry ban of a country I want to go back to.

The student is not from Hong Kong, but from China. Hong Kong people use Hong Kong dollars and have no problem doing international banking to transfer money to Australia (at least for the time being), so the VO is a little bit confusing
That student definitely was from mainland China. Not only the undeclared food, even the packaging of the sanitary pads had simplified Chinese all over them. The same brand of pads would have traditional Chinese printed on their packaging if they were bought in Hong Kong. Around the 5:33 mark, the white sticker on her luggage had a code seemingly started with CZ (i.e. the code for China Southern, a mainland Chinese carrier). When she signed the transaction report (18:23), something like her passport and flight ticket were on the table right next to her. The little booklet had a red cover which meant it's a Chinese passport. On the contrary, Hong Kong passport has a blue cover.
To people with multiple passports, don't show or flaunt them to anybody - including your close friends and relatives. Remember, each passport would mean a separate set of taxes to pay.
I have dual citizenship, and I use whichever of my 2 passports makes the most sense for whatever country I'm going to. I've also never been denied entry to any country, though, so it's not like I'm trying to be sneaky about anything. I just want to be able to go through the express line at the airport when one of my passports makes me eligible...

Just because many students from mainland China use Hong Kong as a stopover on their way to Australia doesn't mean she is from Hong Kong. As a Hong Konger, I can say I've never seen those food items sold in Hong Kong, and the currency she is using is Chinese Yuan, but not Hong Kong Dollars.

Additionally, it surprises me that people who go to school, or have lived, in Australia for years are unable to understand English. I am guessing the courses are taught in English.

There's nothing wrong with using two passports. I use one to leave Australia and a different one to leave Europe (as I often stay longer than the Australian one allows). In this case she overstayed her visa in a country that she did not have a passport for and tried to get around it by using another passport which again, was not for the country she was visiting.
Having visited many places without having to visit consulates or embassies before, getting visa waivers or visas on arrival is very valuable to me as an avid traveler. Having a strong passport due to the sheer luck of being born in the right place is a privilege.
Whenever I travel, I take great care in ensuring I am well prepared with all the documents and that I don't overstay.
I would not want to be put on an entry ban of a country I want to go back to.

The student is not from Hong Kong, but from China. Hong Kong people use Hong Kong dollars and have no problem doing international banking to transfer money to Australia (at least for the time being), so the VO is a little bit confusing

That student definitely was from mainland China. Not only the undeclared food, even the packaging of the sanitary pads had simplified Chinese all over them. The same brand of pads would have traditional Chinese printed on their packaging if they were bought in Hong Kong. Around the 5:33 mark, the white sticker on her luggage had a code seemingly started with CZ (i.e. the code for China Southern, a mainland Chinese carrier). When she signed the transaction report (18:23), something like her passport and flight ticket were on the table right next to her. The little booklet had a red cover which meant it's a Chinese passport. On the contrary, Hong Kong passport has a blue cover.

Remember, each passport would mean a separate set of taxes to pay.
I have dual citizenship, and I use whichever of my 2 passports makes the most sense for whatever country I'm going to. I've also never been denied entry to any country, though, so it's not like I'm trying to be sneaky about anything. I just want to be able to go through the express line at the airport when one of my passports makes me eligible...
