Potato Skillet Meal

  • This is easy to make and I am including economical options for a budget supper!
    You will need:
    potatoes (enough for your whole family, mine were fairly small)
    leftover roast beef hamburger meat,, chicken or pork (about 1LB)
    1/2-1 onion diced
    1-2 bell peppers, any color (I used some of my frozen, so I had 3 colors)
    garlic 3-4 cloves or to suit your taste (you may use refrigerated minced as well)
    1-1 1/2 cups of broth (flavor determined by what meat that you are using)
    salt and pepper to taste
    I also added in some of my house seasoning
    other seasonings to your taste, such as Hey Hedy House, Cajun, Taco or even Ranch
    cooking oil (I used grape seed)
    Bake or boil potatoes. Allow to cool and cut into wedges. Cook hamburger or use cooked roast beef, pork or chicken (shredded or diced). Sauté onions and bell peppers as shown, using more oil than you normally would to sauté in (approximately 1/4-1/3 cup) Removed onions and bell peppers from skillet careful to leave all of the flavored oil behind. Keep skillet on medium high and add in potato wedges. They will not fry up the same as french fries, though several sides will get a wonderful crust to them. When ready add in the bell peppers, onions and garlic (If you are using raw garlic add at the end while sautéing the bell pepper and onions. If using refrigerated mince garlic OK to add at this stage. Add in chosen meat and about 1/2 of the broth. FOLD in slowly as to not break down all of the potatoes. Allow the broth to cook almost away, then add in the rest. OPTIONAL: Add in corn and butter as instructed (if using) Salt and pepper (plus any additional spices to taste). Turn off heat allow to rest 5-6 minutes. Enjoy!

    This looks delicious! Thank you for always emphasizing that the measurements don't need to be exact haha - that's something I struggle with sometimes... feeling like I need to measure out EXACTLY "1/4th cup of (this or that)". So it inspires me to see how relaxed and flexible you are, and then everything you make still comes out amazing! 💞

      Hello! Yes, in many things you do not need to be exact. I totally admit that I don't measure off camera, many times I must force a measure when preparing for a video, though I admit that I did measure especially for the video LOL! It might take you a few times to get it just right to your taste, though when you do get it where you like it, I always write it down as my guide, that way if you don't make it for a long time, you can refer back to it.       Now Marie you know I have been thinking of you. I am definitely doing so much better so I cannot complain. You know, I have good days and bad, though I am used to that and don't let it stop me. I have missed you! So, off camera I have been really working on learning the Instant Pot, I am so late to the game. As you know my kitchen gets hot in the summer and I hate using the oven, the instant pot has been a game changer. Faster cooking times and kitchen doesn't heat up a fraction and even then that is due to me sautéing something or searing the meat. I have of course thought about you so much my friend and I sure hope that you and your family are doing great! I am sending you big huge hugs! OXOX :D

    What time is dinner. I want a cast iron skillet but I don't know anything about seasoning it and cleaning it ect. Glad to see a video from you. Hope your feeling better

      LOL! Hey there Sarah! Don't be scared of one. They are wonderful. There will be a "break" it in period, totally worth it. I need to do a cast iron video don't I? I am for sure not an expert, but I would happily share what I do. Some people on RUclips try to make it SO HARD! LOL It just isn't. If you can, think about getting one, invest in a good starter skillet. I am so glad to be able to start putting out a few videos again. I am slowly but surely working on it. I am feeling much better thank you! I hope that you are doing great, very happy to see a post from you! :D
