If you have never had blackened fish, then you don't know what you are missing! In this recipe there are no exact measurements, it is easy to make. I will list below what I use and what temperature that I prefer to use for the skillet. If you a new to this it might take you a fillet of two to get it where you want it to be. I surely hope that you will try it!
⦿ tilapia fillets (you may definitely use other types of fish: redfish, catfish, cod. Really most any fish that you like)
⦿butter, for the skillet and the fish (I used clarified butter in the video. You may certainly use melted butter cut with a but of cooking oil as not to burn so quickly. You may also use cooking oil like canola, vegetable, etc,. It will NOT be as flavorful)
⦿small amount of neutral cooking oil, I do NOT recommend olive)
⦿ Cajun seasoning (I used my Cajun blend here is my newer version video:
    • DIY Cajun Seasoning! L... )
    Let's get ready:
Fish fillets If they are frozen, then plan for thawing if refrigerator overnight or safely thawing in a bowl of cold water, keep changing the water every 30 mins until thawed) Pat thoroughly dry before starting
Butter: simply melt your butter or use clarified
Cajun seasoning of your choice, I hope that you will try my recipe for the seasoning
skillet, I of course recommend cast iron if available
My preferred skillet temperature is right at 375F
The fillets will take 2-3 minutes (approximately) per side. You can tell when it is done by inserting a fork and giving a slight twist. If it flakes easily as shown, it is done.
I hope that you try this! If you do PLEASE let know know! I LOVE to hear back from you! ENJOY! :D
