    I love that Mary commands that "cracks" in a roulade cake are forgivable and "part of its charm" whereas many instructional recipes stress avoiding cracks -- those cakes don't have the tight "Catherine" wheel because you are avoiding cracks. I can relax now knowing Mary says cracks are OK!

      I don't know how people can make roulade without cracks because unlike a swiss roll it has no gluten in it. This recipe is the best roulade recipe I've ever made Mary's recipes never fail me

    I have always rolled the cake while still warm and then unroll it to cool. That way you avoid the cracks. Just saying...

      @@denhamk Think Linda means roll it twice. The first time you don't add any filling - it's just to make it maleable for the final roll.

    Kinetsie. The twospoonsfull of cream and Bailey's, were for the icing on top of the cake, not the filling.

      This is a roulade different to a swiss roll. This recipe doesn't contain any flour so without gluten it cracks. In my opinions roulade is much tastier it tastes lighter and softer.
