The biggest reason to heat milk to almost boiling before fermenting is that it improves the texture of the yogurt. During fermentation the bacteria consume lactose and produce lactic acid which causes the milk proteins to denature and coagulate trapping most of the fat. I think people need to understand why we heat milk it changes the protein of milk nothing to do with sanitizing. The whey is full of nutrition too. I was visiting a channel who said the reason to heat is to sanitize, not true and she had her comments turned off so I moved on. I am Greek and make thick yogurt all the time. I add (if I have it) a cup of of powdered milk to thicken too and a few teaspoons of sourcream culture from sour cream. It makes it tangy. I never strain it.
If you do save the whey for soups.
Have fun making yogurt. Do not strain it. I make twelve quarts of yogurt every two weeks no failures old school but used the slow cooker no scorching.

We make our own yoghurt here in Syria, and rarely buy it. It's not difficult and can be used without an instant pot. The method you've followed is exactly how we do it. Instead of using instant pot, we cover the pot with a towl and leave it overnight.
And the thing you have gotten by draining the yoghurt is actually not yoghurt, it is called "labneh". We add a bit of salt, dried mint onto it, and olive oil, then devour it with bread. It's served cool and is so refreshing! You may use it as a dipping for chips or veggies (cucumbers go GREAT with it), & it will taste amazing on toasted garlic bead. You can make it lebanese style by adding some minced garlic, dried mint, and black olives, then some oil. Good god it goes well with everything.

    • @rosewilson2399

Same here, we put the milk into jars and sometimes we leaveit inside the microwave or oven (off mode) instead of covering with towel. We wait for 4 hours and then let cool in the fridge overnight. The less you touch during process the better your yoghurt will be.

    • @rosewilson2399

I'm going to ask what may seem like the dumbest question for this video but please bare with me. If you can already buy prepared yoghurt and you need yoghurt to make this recipe, then why bother to make your own yoghurt? I promise I'm not trying to be a smartass. I really want to know why make your own yoghurt when you can buy it already made. Someone?....Anyone?

Brilliant question!! I’m using the already prepared yogurt for the live cultures. You can buy live cultures but it’s so much easier(IMO) to just use them from the prepared yogurt. You’ll only need a few tablespoons and once you make your first batch you can reserve a bit of that yogurt to use as your starter.

Use Fairlife milk and you don't have to heat, that's already been done for you. Fairlife in the pot, add four to 6 tablespoons plain yogurt with active cultures, set and forget. Save some of the new yogurt in ice cube trays and use three or four cubes to start your next batch. Thaw first of course.

When you go onto youtube type in Greek yogurt with the Greek professor & you will come to his youtube video of making Greek yogurt on the stove. Greek yogurt is so expensive to buy & you can make your own Greek yogurt at home for far less than you would have to pay for it at the grocery store. I watched his video & learned how to make it & have been making it for years. I just double his recipe which gives me about 9 quarts of yogurt & then after I drain it I end up with about 4 quarts of Greek yogurt. It is so good too!

I strain it using a colander and lining the inside with regular round coffee filters. The yogurt doesn't stick to the filters very much and it's pretty easy clean up. I've never seen the towel idea before, but it makes a lot of sense, especially if you're trying to reduce waste. Great video! You're so cute.

WHY aren't you doing the first step in the Instant Pot??? It's simple, only makes one dirty pot, AND it's really easy to take the inner pot out and put it in a cold water bath to cool it quickly.
Also I use a nut bag, and when you first pour it into the bag, the initial pressure will push a small amount of the yogurt through the mesh, but very quickly you'll see that just the whey comes through - from a quart of yogurt you might lose a tablespoon or so and the rest is whey, WHICH, btwhey, can be saved up (over a couple of weeks) until you have a quart or so, and then use this to make homemade RICOTTA CHEESE, mmm, mmm, mmmm ;?)

The skin on top is the best part. You don't need an instapot for yogurt... just pour it in servings and cover with blanket for 8 hrs.

It may be just me, but the warm yogurt you get when you wake up makes a mighty nice warm breakfast. Put a little fruit or sugar or even a little cereal with it. It gets you going.

I've heard layers of coffee liners on top of a wire strainer does the job well. Haven't tried it myself but will be doing it soon, can def keep you updated since I will be using your tutorial.

this is not making yogurt, because it calls for pre-made yogurt. WTF? If i had pre-made yogurt why would i want to make it homemade?

You don't always have to use store bought yogurt as a starter. You can use probiotic capsules. After heating a gallon of milk to 180° and then cooling to 110°, open 4 capsules and pour the probiotic powder into the milk, stir well and and then incubate for 8-12 hours. Most people incubate for 8-9 hours. The longer the yogurt incubates, it will develop more tartness. Most commercial yogurt does not have live cultures in it, so it has no nutritional benefits. Commercial yogurts contain dry milk powder, stabilizers and sweeteners, again, no nutritional benefits. Typically, commercial yogurt is incubated for about 4 hours. Homemade yogurt made with active live cultures is much more nutritional and has a better flavor. World of difference. Homemade yogurt is more economical too. For example...1 gallon of milk is 128 ounces, a little container of store bought yogurt is 5.3 ounces. The math is simple. Costs: gal milk $3, store yogurt is 5.3 oz for $.91. Math: 128 ÷ 5.3 = 24 containers x .91 = $21.84. Homemade yogurt cost less than $4: 3 + .91 (yogurt starter) = $3.91 ÷ 24 = $.16 per 5.3 oz container! Homemade yogurt = very economical and nutritional. If you like to eat yogurt, see now why homemade is better?
