Yes, heavy cream is double cream. you can use whatever weight of chocolate you need for the size of your cake and then just halve the weight to calculate the quantity of cream.
Hi! I use Trader Joe’s own brand heavy whipping cream and giant dark chocolate bar. Any heavy cream will work (double cream if you’re in the UK) and for chocolate, a bar is better than chips because chips are treated so they keep their shape
