Well, you need to take care of your health issues. To the best of my knowledge, one has to go through a medical checkup when joining the institutions. But you need to check with the current rules on that with any institution you apply in. A match is desirable as the department has given much thought to this problem before giving the advertisement. Similar areas may be ok but experimental and theoretical may be too far apart. But this is my opinion there may always be some exceptional case where it may vary as the CV was so good that the search itself shifted. But that is rare.

Well if you do well in ms and PhD and have good quality journal papers plus some postdoc experience then you have a chance at the assistant professor job at iit. But there are many other universities also where you can get a job at that stage. I would suggest not to have one type of job goal only as competition is tough and luck always plays a role.
Yes you can certainly do that. There are some people who get jobs particularly at IIT without any postdoc. They may be interested in the research area to fill a gap in the department and the courses a candidate can teach.

No, but it is beneficial if you have a degree from IIT be it bachelors, masters or PhD. Degrees from iisc and good foreign universities as well as places like Jadavpur and NIT or IIIT are also good. Some professors do not have any degree from eminent institutes or universities but may have developed a good publication list and done postdocs through their own efforts also.

I was searching about being assistant of the professor in iit, i heard that when you're in 3rd year or 4th year you get a chance of becoming assistant of the professor if your gpa is greater than 8 and you get some salary like 8k to 10k a month

Sometimes students become project assistants and help in sponsored research projects. They get paid for that.
