I’m late watching this video but thank you for doing a freezer meal episode. I always appreciate ways to keep my family well fed while also reducing stress and energy in the meal prep.
I was introduced to mole by a good friend over twenty years ago and one of my favorites are enchiladas. I've never made mole from scratch it's always seem like alot of work on food network, your way was easy looking and I will try.

I am Native American and eat more Mexican food than mexicans . Ha Ha I really do love it. I eat it 3-4 times a week. Can’t get enough of it. Great food 😊

Yay! Im.so happy to find people that love mole like me. The beans you kind have it to eat it fast. I don't give more than 3 days inside the fridge. So usually I freeze it
I love your channel. I have made a few things but I’m still am struggling with CORN TORTILLAS. PLEASE HELP, I am using Organic Corn Masa, they are not as soft/tough as the regular masa and they don’t blow up as much they should. Are they to thick? Please help me, we LOVE HOMEMADE. THANK YOU 💕🙏🏼
U can deff make taquitos and tacos crunchy in the oven with hardly any oil I do it all the time, but you do need to spray with some oil and flip half way

I love rice. I keep rice. I use all my leftover rice. I’ve kept it in the fridge for up to three days before and use it then I heard that it grows some kind of bacteria on it That is deadly if it’s in the fridge too long do you know if that’s true?
I have a question please l. What name brand of corn tortillas do you use? I shops at Walmart and they have different name brands. Some of them falls apart and I’m not sure which ones to buy.
I buy which ever one seems the most flexible in the package and try to use them while they are fresh. I also freeze the excess tortillas, thaw and store in the fridge.
For anyone who wants to switch to gluten-free for the meatballs substitute raw oatmeal for the bread crumbs. Also for meatloaf. So much tastier. I've got to try the taquitos.
@@marieb9926 oats themselves are gluten-free but sometimes they get cross contaminated with wheat either in the field or the processing facility. You can buy certified gluten-free oats. So people with celiac disease or severe gluten allergies have to be really careful. I went gluten-free as it's highly inflammatory. It took away most of my arthritis pain.
It doesn't really matter what brand you use as long as you don't skip the vital step of heating them first. In a pan or microwave, either makes them pliable and won't flake apart

Yes 😆. I love my mom. And even though I have her recipe it does not taste the same almost but not the same lol. Moms are the best.

Spray all the tortillas then microwave them in a stack till they are very soft and hot. Same result less heat and work

I dip my tortillas in water and then put them on a hot griddle. Turns out very pliable for rolling.
Wait... what do you do with the mole sauce in the freezer? Like bake chicken and add it, or what??
