    When my kids were young we lived in an apartment and our neighbors were Mexican. Every night when we came home and walked in our entryway their apartment had the most DELICIOUS smells. We were always jealous.

    Some of my favorite meals growing up watching my parents cook were Cuban chicken croquettes, arroz con pollo, fried sweet plantanos, and tamales, ect...Yum 😋😋 ❤❤

    My grandmother (English ancestry) added nutmeg to her white sauce. It adds a depth of flavour that pairs well with salty foods.
    She used it with corned beef.

    I always put the peels if the carrots and onion in the bones& skins and cook them the 2nd time too make bone broth.

    Wow we make something similar after Thanksgiving with leftover turkey every year. Turkey Croquets. We don't add corn, we do chunk up some onions. They taste amazing. My Husband had never had them. They are so so good. He asks for them now 😊

      Yay!!! Welcome. Honestly I haven't done it. Because we eat it very quick. We put salsa in everything. But you can just make a small portion of salsa. With this green salsa it's so easy just add the amount of Tomatillos that you desire some oil cook it and then blend it with some salt and done.

    for the chilaquiles you can also use one can of roasted red peppers, 3 de seeded chilie de arbol ( take the seeds out or it will be too spicy. ), garlic powder, onion powder, 1/2 table spoon of chicken bullion powder. blend together with 1 cup water. everything can be found at walmart.

    I am so glad that I found your channel. My boyfriend/fiance is from Mexico and has been here in America for over 20 years. He loves my cooking but would love if I can learn so mexican dishes. Also we both are on a budget. Is there a way you can make a video with the cooking equipment I need? Also have you considered making a Easter budget video since that is the next holiday? Thanks.     I didn't catch whether that was a 10 lb bag of leg quarters or not. I love buying those big bags because you get 11 or 12 leg quarters per pkg and it usually cost me $5.90 to $8.90.
    Before inflation hit i could get it even cheaper. And then you can split it at the joint too, for smaller portions.

    Its amazing how inexpensive Mexican food can be. The restaurants charge an arm and a leg for Mexican food.

      Washing or rinsing chicken increases risk.Salmonella, Campylobacter and other harmful bacteria live on raw chicken. Washing or rinsing doesn't remove this risk, it worsens it by helping the bacteria spread. When you add water through washing or rinsing, you give these bacteria a way to travel throughout your kitchen.
      That's why I don't wash the chicken. Thanks for your comment. Have a great day

    I need to buy a rice cooker. I cannot make rice to save my life, I have tried so many times, watched so many yt tutorials & followed recipes exactly. It still does not work!

      Really? Tell me little bit more about it. What is the problem? What happens with the rice? A rice cooker dries the rice to much. Let me see if I can help you.

      ​@@mexicancookingwithgaby6589 It's always too done on the outside, not done enough in the center & sticks together. I have tried with oil, no oil, rinsing, not rinsing, boiling for a minute then reducing heat & covering, not boiling at all and just simmering low with cover. I want to make rice that is cooked evenly and all the grains are separate, not sticking. thanks for offering to help 😣
