    Hello. everyone
    I made a really delicious green tea roll cake. It is a comfortable and stable cake given by green color. I made green tea ganache and squeezed it before rolling the cake. This is the point that enhances the taste of green tea.

    [Ingredients]
    150g egg, 21g yolk, 81g sugar, 54g cake flour, 10g green tea powder, 21g milk, 14g unsalted butter, Green Tea Ganache: 55g White Couverture, 2g Green Tea Powder, 40g Heavy Cream, Chantilly Cream: 260g Heavy Cream, 22g Sugar
    [How to make]
    1. Put the egg, yolk and sugar in a bowl and mix lightly to dissolve the sugar in a hot water bath, then heat to 38-40 degrees.
    2. Whip to rich foam
    3. Slow down to clear air bubbles
    4. Sift cake flour and green tea powder 4 times and mix lightly.
    5. Mix a part of the batter with melted butter and milk, then mix with the main batter
    6. Pour the batter into the double pan and bake in an oven preheated to 170 degrees for 15-20 minutes.
    7. Trim the brown surface of the cake
    8. [Green tea Ganache] Melt white chocolate in a hot water bath and mix with green tea powder
    9. Add warm heavy cream and mix
    10. After hardening in the refrigerator, put it in a piping bag and use it
    11. Make a firm cream by mixing 260g of heavy cream and 22g of sugar
    12. Spread chantilly cream on the cake
    13. Put green tea ganache about 3cm from the starting point of rolling the cake.
    14. Seal tightly and store in the refrigerator for 2-3 hours

    달걀과 노른자의 뜻은….
    달걀=노른자+흰자 고
    거기에 추가로 노른자20그람 더 넣으라는 걸까요?
