I've been watching your past videos these past 2 months, this afternoon I found and used one of my grandpa's sharpening stone and practiced on some of his cheap knives. I can understand why you say it's meditative. Since I enjoyed it so much I decided to get the CeraX 1000 stone and the silicon pad as a new hobby to take on. Thanks for the advice and the many donations you do on your channel.

Dear Ryky, My name is William Darman and I found your sharpening videos absolutely indispensable in learning for myself how to sharpen knives. I love to cook and never really had a good pair of knives. Over the whole COVID shutdown I decided to buy some good knives and found your reviews. At first I was just looking for some good knife reviews but after watching some of your videos I decided that I should learn how to sharpen my knives too. The fact that you did it by feel without angle guides was great. You went through the entire process from start to finish and I used your method to sharpen my knives. . I started sharpening on my old stainless steel knives mostly because if I screwed up I knew I was going to get some new ones. I started on a 600/2000 grit whetstone that I already owned and never used. The first knives I sharpened I could not get a good edge simply because I could not get a constant angle. I watched your videos again and saw what I was doing wrong. After I gave it a second try I got my knives so sharp I could shave with them. I ended up sort of becoming a knife geek and bought a good set of Shun knives and I am looking at another set of carbon steel knives. Just so I can round out my growing collection. I have found that I really enjoy keeping my knives sharp. hell I am even saving up for one Bob Kramer carbon steel knife just because they seem so beautiful and useful. I have always enjoyed cooking and have found that now that I know how to keep my knives super sharp it has made all of my slicing and dicing effortless. P.S: I was looking around your channel and came across your critique of the Grodan Ramsay video. And you are correct when he breaks the chicken bone with the knife by slapping it. That is the completely incorrect way to cut a bone. When you prepare a chicken to cut through bones you would always use shears. When you prepare a chicken or any other type poultry you cut through the joints only never bone. You can also use boning shears that are designed to cut through bone. William Darman

I was thinking of opening up my own Swedish Cuisine restaurant but seeing a good amount of Gordon Ramsey shows like kitchen nightmares makes me think it’s more of a pipedream. I also don’t want work to kill what I love doing in my spare time/hobby. I love making drinks/food for people especially guests and family. I did mixology in college and can even read people and know what drink would best but their personality/demeanor. Hope your family stays safe and healthy! Love all the knives you show! I bought a Mosfiata 8” chef’s knife before coming across your channel and now in regret after not getting a better build quality for my cutting and chopping as I make a lot of food on the grill, oven, and stovetop. I want to cut through onions like you and the onion responds with “did you just feel a breeze?”
Last class I took at the CIA for a boot camp was making soups :) Made several miso soups along with some consummes and others. I had a lot of fun, but I have only taken week long or weekend courses for specific things on occasion. Unfortunately only the soup class taught me anything formally when it came to Japanese cuisine. Personally, I have always been a hobbyist/enthusiast myself. Maybe 20 years ago I would have jumped on something like this, but I got a different day job. Stuff like this is always cool to see though.

Personally, I have always been a hobbyist/enthusiast myself. Maybe 20 years ago I would have jumped on something like this, but I got a different day job. Stuff like this is always cool to see though.

What knife would brand/makers would you recommend over miyabi? I was looking at the birchwood Miyabi chef knives but for that rice point I was thinking maybe a handmade knife alternative.

And I make sushi for my family all the time...my step mom is from Tokyo. But still we need a Japanese restaurant here! I am considered a stellar cook by many, but I work in a factory that recycles paper to make egg cartons even though I should probably own a restaurant lol. I know its a long shot, but I have represent Indiana, the least likely spot for a Japanese restaurant lol.
Have you heard if koi artisan knives and are they any good any advice would be helpful they seem new only started in 2016 but look nice

I would like to ask for and suggest two videos, the first one about nesmuk knives, I came to know a little about them but if possible, I would like to see what you think about and if you can make an assessment. second, how about making a video about the hardness of knife materials against their sharpening and development.

On another note, I am very new to this type of sharpening but it has always intrigued me. I am about to buy my first system and am looking into something like the lapping film I've
seen you use on occasion but am concerned about tearing the film so I was wondering if you would mind sharing whether to sharpen pulling towards the spine or can you sharpen towards the cutting edge on that system?
