Remaking an old school recipe I did 2.5 years ago. Grabbed some picanha and sliced them up to be skewered on my large sword skewers. After slowly roasting them close to the fire, I make a jalapeño vinaigrette salsa to add to the top. Savory, salty and tangy all at the same time. So. Fricken. Delicious. So where can I find this meat? Not found in store's really?
Find a butcher or meat market and ask for picanha (pi-CON-ya) or a whole rump cap. I think it comes from near the top of the hip. Then you slice it the same direction he did before curling the slices onto the skewer for the fire.
