You butchered this picanha, over and over again... 1. Almost half of your so called picanha is outside flat. Proper picanha only goes from the tip to the second vein (easy to spot on your thumbnail). 2. Don't use bbq rub, it makes everything taste like bbq rub. Just use simple coarse sea salt and taste the actual meat. 3. Once done, any resemblance of silver skin between the meat and fat will be long gone. It melts in your mouth. Don't be a baby. 4. The round pieces on the skewer are that way for a reason. The taste of picanha comes in great part from the fat melting into the meat. Keeping the fat all around the meat if the best way to ensure the fat won't just dribble down to the embers and leave the meat out dry. 5. Nacho cheese, salsa, mayo. These are the devil's condiments! They along with evil ketchup are used to mask the taste of the food underneath. Your could have replaced the picanha with soy meat and it would come out tasting the same. 6. Your dog is nice and all, but throwing picanha to the dog is a sin. It is probably written somewhere in the bible, and if it isn't, it should be.

I freeze the meat on the skewer first so i get a great crust with a tender center. It lets the fat render more too.

Almost a genius move😮 why don't you cut the fat, remove the silver skin and then put the fat and the meat together on the spade 🎉
before scewer, I would cut out silver skin, put fat back between meat on scewer and braai ,( bbq) ...
