The markets don't act like that most of the time. It's much more erratic and unpredictable than it was years ago, you very rarely get trades as those shown in your videos anymore.

In my experience with the way I trade, everyday markets can be a little more noisy than some of the larger markets, however, the same trades and exact same patterns occur every day
