@@StoryBites. I'm from Auckland originally, but now reside in Sydney Australia. I had a few cafes in Auckland a few years ago, but sold it to move back to Sydney for business and family reasons. I have relatives in ChCh so maybe one day.
I was a chef for 30 years. What they don't show you is the years of of literally making yourself a slave to gain access to the best chefs. Then you learn the techniques and discipline it takes to work on this level. Then you realise your life is out of balance and that becomes the hardest part of it all. Then you start to live.
That was such a good video and story. I hope Julie feels proud of how far she's come in life, and what an amazing woman she is. Her character, her wisdom, her humility. BRAVO chef. You deserved to be heard, and I am so proud of you.
