Gingerbread Cookies? Always! Soft and Chewy Honey

This Classic Gingerbread Cookies recipe makes soft, sweet and lightly spiced cookies!
Prep Time: 20 min | Cook Time: 10 min | Total Time: 30 min | Servings: 45-50 mid-sized cookies

INGREDIENTS:
• 3/4 cup unsalted butter
• 1/2 cup white sugar
• 1/2 cup honey
• 1 tsp salt (foodtolive.com...)
• 2 tsp ground cinnamon (foodtolive.com...)
• 2 tsp ground ginger (foodtolive.com...)
• 1/2 tsp ground cloves (foodtolive.com...)
• 1 egg
• 1 tsp baking powder
• 1/2 tsp baking soda
• 3 1/2 cups white pastry flour (foodtolive.com...)
INSTRUCTIONS:
1. In a medium saucepan, melt butter over medium-low heat.
2. Add sugar, honey, salt, cinnamon, ginger, and cloves. Stir mixture together until well incorporated. Remove from heat.
3. Transfer mixture to a medium to large mixing bowl and add the egg and beat it in with the mixture.
4. In a separate bowl, add baking powder, soda, and flour and whisk together.
5. Add flour to the honey mixture and stir together with a wooden spoon.
6. Preheat oven to 350℉. Line cookie sheets with parchment paper and set aside.
7. On a floured surface, roll dough into 1/4 inch thick rectangle with a floured rolling pin.
8. Cut out shapes with gingerbread man cookie cutter or cookie cutter of choice. Place at least an inch apart on cookie sheets.
9. Bake for 8-9 minutes or until edges are browned. Let cool on cookie sheets for a few minutes and then transfer to cooling racks. Store in airtight containers at room temperature or in freezer.

Can I skip pastry flour?

Can I add gingerbread spice if i don't have ginger or cinnamon?
Sure! You can totally use gingerbread spice instead. Start with about 1 tbsp, or adjust to your liking.
