The OP's parents and ex wife did him wrong to a serious extent and that can't be ignored down the line, let's hope that he can move on from this unfortunate experience and set boundaries in the near future.
Also I wouldn't let the parents be around the kids anymore since who else knows what they'll do next. OP should just tell the truth now rather than later since I believe his ex and parents would spin it as a simple disagreement.
Second to infidelity, this is a massive betrayal. Not only from his own parents but his own wife too!!! And as delicate of a topic as this is to handle, OP needs to take all 3 of them to court. Not only from the financial theft from the parents but the theft from his wife (the gambling) because she didn’t tell him till she got caught in the lies she spun.

Wife became a spendthrift and a gambling addict, both of which are not good for a normal life to lead, let alone a married life with children in it. Parent's who instilled about honesty, responsibility, trust, and hard work, in their son, failed to follow their own teachings. (People like OP's parents just don't change overnight to commit crimes and fraudulent activities, it is just that they never had an opportunity to do it in the past) Parents wanted to retire just like their family and friends, but didn't have money to do. So they came up with a master plan with their own gambling addict lowlife DIL, which was months into making, and all three of them finally succeeded in screwing up their own son and husband. Wife was already on the path of destruction, didn't matter whom she destroyed in the process of securing herself and evil way of life. She didn't even think about her own children's well-being. Good for people like OP, who don't put up with crap and disgusting scums as family, and standing for what is right.
