  • Today we solve one of my toughest challenges yet. Freeze dried mashed potatoes seems easy enough, but once I started trying to rehydrate, I got stumped. After several bouts with rehydration and trial and error, I solved the problem of the freeze dried mashed potatoes. If you add heat to the rehydration it completely changes the game. I first tried to rehydrate with liquid that was cold. It was extremely watery and I was about ready to give up. I put the mixture in the microwave for 2 minutes and wouldn't ya know it, I got instant mashed potatoes! I include the recipe for making these consistently over and over and a rehydration method for perfect freeze dried instant mashed potatoes every time! HAPPY FREEZE DRYING!

    I take my mashed potatoes right to finish. Add in the milk, butter, chives and let it rest in the fridge for a day before freeze drying. To reconstitute I've found a 1:1 ratio of hot water (90c/194f) from the kettle works perfect. Not quite boiling, but still really hot. Its quite literally instant! Reminds me of making those instant packages of oatmeal.

      I'm wondering if the fat in the butter would reduce the shelf life if sealed in mylar bags?

    I freeze dry and powder potatoes. I started out using the directions for store-bought instant mashed potatoes and had instant success (NPI). So, I never changed. BTW, this is also a good use for FD milk powder.

    We did another load of mashed taters today,,,in the FD now. Medium FD, 4 tray. Each tray used 4 pounds taters mashed with milk. Another load tomorrow,,,then another. Did a LOT of raw hash browns and a full load takes 6/7 pounds. Sliced taters coming soon. Canning potato chunks too. Thanks for the videos, Live.Life.Simple,,,or should I say Retired.at.40!!

    This I've done. Cooked them completely to done then mashed, froze, and freeze dried. Powdered the potatoes out of the freeze dryer and boom! Instant mashed potatoes some time in the future. They went into long term storage.

    Regarding the funnel: I found that when using a plastic canning funnel, especially when packaging freeze dried milk, it enables "static" after I run the milk through the food processor (which is also plastic, mostly). It can really get irritating when that dried milk powder becomes airborne and resists going near the plastic funnel.
    My solution to this has been to use a metal canning funnel, it seems that it doesn't allow as much static build up. Please consider making your proprietary funnels out of metal.

      Don't think I haven't tried. I would make all of our materials out of stainless if possible. Between sky high metal prices, fabrication and tooling costs and the cost to consumer, it's just not feasible. That is why you can get metal tray dividers but they are $400 per set.

      Wordsof His: I don’t know if you have a Princess Auto where you live; they are excellent for durable steel tools, including funnels. They mostly make tools and farm supplies and such. The fun of it they carry has a wider mouth aperture, and that aperture is threaded so that you can add the smaller apertures; it’s been a couple of years since I’ve been inside the doors, just because of the times. You’d have to look online to find the price.

    For best results with your thermal imaging camera pull all four trays immediately after releasing the vacuum starting with the top and bottom trays. This method keeps the chamber from cooling the edges of your trays. Hope this helps.

    I just did 30 pounds of potatoes with very lumpy mashed potatoes, because that's how we like them. I found 3 five pound bags makes 4 trays of mashed potatoes. I also discovered, if you have an Instapot, 5 pounds of cubed potatoes fills the steamer basket to the top. I pressure cook for 5 minutes and let sit for 4 minutes, then release the pressure and mash in the mixer. While the instapot cooks the potatoes with no hassle, I can cut up another pot and have ready as soon as the first ones are done. Because of the basket, there is no extra water other than what the potatoes are made from so less drying time. Way less mess and best use of time. I got the potatoes for 99 cents a bag at Meijer.

    When i make mashed potatoes i substitute the butter and use sour cream makes a beautifully creamy potatoes. 😊🤩❤️🌹❤️

    Have you thought of adding sour cream, salt, pepper and milk to potatoes before freeze drying? I would think butter would need to be added when reconstituting; because of the fat content.
    Just a thought.

    On the new funnel please make sure that it fit inside a ball jar mouth. and I will be the first one to buy it. The one that I have now is the same blue one you have there and it will not fit.

      Hi there, that was priority number one when we designed along with the usable area for dumping FD product. Most people do use the wide mouth these days, but I know people that have canned for awhile have a stockpile of small mouth or original size. BTW the blue funnel will fit inside a wide mouth.

    I noticed when you weighed the cubes before and after FDing but you didn't use the end total you just used volume to dictate the amount of liquid.

      yep. for some things it works great. The rack that comes with it that sits at the bottom is a great way to rehydrate slowly.

      Catherine: Call Trimleaf in BC; that way you don’t have to deal with customs and careers adding costs to pad the bill, messing with the tax remission. There could be a bit of a wait, and they do tend to run specials around special occasions. But they’re prompt with their delivery schedule. I would also order any extra bags and oxygen absorbers at the same time so that you don’t have to pay separate shipping.

      @@catharinef.40 : They have a warranty. That being said, it’s a truly frustrating experience if you need help with something that goes beyond the content in the manuals.
      If you go with Harvest Right brand, there is an 800 number that you can call for help. The problem is that they have farmed out their support to workers in third-world countries. They provide something that the workers called “factory training“, and it essentially amounts to people learning what’s in the manual that you already get. They don’t actually ever see an actual machine, much less use one, so they’re not any help whatsoever, if you end up with a problem. Mostly good people, but you could be weeks on end desperately trying to get help.
      When you ask to have a call escalated to a supervisor, the supervisor in these Third World countries also do not ever see a machine or use them, so they also do not know.
      Very often, they will promise to find out from the factory and get back to you, but do not bother to get back to you. I would definitely get the time and date will be getting back to you, so that you know to pursue another avenue, when they don’t get back to you.
      If you persist, there is really wonderful help to be had when you have something weird happen. Eventually, you can speak to somebody in the United States who actually uses the machines. Most of the things that can happen, that are not covered in the material that they send you, are things that people eventually have happen In the normal course of things, so they’re not a big deal if you know what to do; the problem is getting that help to know what to do.
      So if you know somebody that you can talk to, who’s been using one for a while, you’re already ahead. Not so many use them in my neck of the woods, so sometimes there’s just nobody local to talk to about it; if you’re thinking of getting one, you could be one of those people that has no problems whatsoever, but what I would do is make a note of Canadian people online that you come across, who had weird things happen. If you have to drop them a comment to get their attention, you may be able to arrange to speak with them, If you can’t manage to get to get an answer from the support line.
      The other thing that you could do, is go to the patent registry office online and download the information That the inventors supplied with the patent application. That’s Supplies all the information about the machine except The type of information on solvents that won’t interfere with the chrome coating inside the drum. Incidentally, according to the factory itself, alcohol is a good solvent, and since it’s so expensive in Canada to use above-proof, I would go with denatured alcohol because it’s cheap and evaporates completely. The factory also recommends warm, with or without mild dish detergent, are water vinegar, but vinegar can actually break down the chrome finish that protects the interior of the machine from rusting and keeps it durable.
      For most things, there’s no problem whatsoever. So if you’re getting started with it, I would start with Foods that are favourites of yours, and are natural plant material as opposed to eggs or candy. So maybe strawberries and other fruit, sliced in frozen for economy of time when you go to actually freeze dry them. You could save yourself a lot of time and energy that way.
      Once you have done enough of that, I’d move ahead to the next food stuffs that are on your list. Pick a category and get comfortable with it. The last thing I’d learn, is raw eggs, caramel, and that sort of thing. I’m trying to figure out what it is about these foods that can make them pretty much explode over the inside of the machine, and the best I can come up with is that they have a lot of air incorporated in them, if you put eggs through the blender to combine them first.
      You need to know that these foods expand like crazy, and it’s definitely much better to freeze them in advance.
      Everybody tells you that these things can expand, and there are videos on how to clean the interior of the machine, these don’t go nearly far enough if the explosion is bad enough.
      The eggs can coat the entire interior of the machine, which is the manual already says how to clean so that’s not a big deal. And all the videos talk about how to clean these machines. No problem. But what they don’t discuss is what happens if the pump ends up exploded and vaporized egg matter down the hose pretty much to the pump. And nobody needs food matter they can get in and clog up the pump and spoil it, Or even pulled into a corrugated hose and becoming a solid core plug. Nobody needs food matter stuck anywhere in a machine that is used for food processing, that can become colonized by mold. And it’s not discussed in the videos or in the material from the factory.
      It’s also not a difficult thing to deal with, with the right help. Unless I get a request for that information, since it’ll take a while to spell out, there’s no need for me to get into that right now.
      The oilless Pump that you can buy for them it’s not a perfected technology; Those breakdown frequently and you have no capacity to use your machine while you’re waiting for the replacement to come. There could be quite a wait to get parts, so the next pump down is called a “premium pump”; sometimes they’ll throw that in At no extra charge during a promotion when there’s discounts on the machine as well. You’ll get about 20 uses from it before you have to filter the oil. It comes with enough oil to drain the old oil into the filter, and to put fresh oil back in so that you can use it again right away. It’ll take half a day at least for that oil to filter, but more like a day. That way your work schedule is not interrupted. The cheapest pump that you can get, requires you to change the oil every four uses. So even if you decide to buy your machine when the premium pump is not part of the deal for free, it’s worth paying an extra hundred or paying an extra hundred or $150 to get.
      My comment is a bit lengthy, but this is the information that I wish somebody had supplied me with at the outset.

I am single and live in a condo and don't know anyone technically inclined (including myself :)) and this would be a huge financial investment for me. You have given me a lot of great info...thanks!

      potatoes that are powdered would be some of the longest lasting food you can freeze dry. Most things that are in powdered form will be on the upper end of the food storage spectrum. I would expect 20+ years if done properly.

      Russell Kamp: If you seal them in glass or mylar with an oxygen absorber appropriate to the size of the container, you could get 30 years’ storage of them.

    I'm not surprised that you needed water + milk + butter....that would be what you'd add to regular cooked potatoes to make them into mashed potatoes! Also note, using an electric mixer to mash your potatoes will make them pasty & gross. Either use a hand held masher or a ricer. Beating them with an electric mixer breaks up the starch molecules and turns them into glue. Yuck!

      The instant is dehydrated not freeze dryer . Dehydrated still has a much higher moisture content in it than freeze dryer freeze dried has a longer shelf life
