Smoked "Cupcake" Chicken Thighs - Consistently Juicy and Delicious!

- Many years ago, I saw an episode of Pit Masters, where Myron Mixon showed his method for creating award winning competition chicken thighs. His method for creating consistent looking and wonderfully tender chicken was by using a cupcake tray.
In this video, I show you how to do it and present you with some options for BBQ sauce and rub.

Because the macros on this recipe will vary depending on what you use for a rub and sauce, I'll simply list the steps below...
1. Preheat smoker to 275F (135C). My favorite wood for smoking chicken is cherry wood.
2. Using kitchen or poultry sheers, snip off the "knuckle" ends of both sides of the thigh bone. Also if there is more skin than is necessary to cover the top and sides of the thigh, trim that off.
3. Coat the skin side and bottom of the thigh with the BBQ rub of your choice, then stuff the thighs, skin side down, into a large cupcake or muffin mold with holes cut in the bottom of each cup.
4. Place the mold in an aluminum pan or on a baking sheet, add 1.5 cups (355mL) of chicken stock to the pan and smoke for 1.5 hours.
5. Using a large spoon or tongs, flip each thigh skin side up and smoke for 45 minutes.
6. Transfer the thighs to a separate pan or tray and coat the skin side with the BBQ sauce of your choice.
7. Smoke for another 30 minutes, then serve.

Hi Steve! We cooked the KCBS pro circuit since 2004, KCBS reps, master judges and organizers, Cooked with Myron many times over the years, Myron was more MBN (Memphis BBQ Network)which is all pork. When Myron started to cook KCBS He had to do chicken and brisket as part of the 4 meat categories. He was frustrated with judging at first, call the judges a bunch of "eaters" lol Somewhere around 08 or 09 he did the cupcake chicken as a joke, saying it made identical pieces for the turn in box. I think if memory serves he only did it a couple times, but once people caught wind of it, it was a big thing for a year or so. Now some people took this and ran with the 8 in a tray mini loaf pans, more natural shape being rectangle. Keep up the good work! Your one of my faves to follow!

The old Myron Mixon method! Nice!
I have been planning to smoke chicken thighs on my smoker, but feared a dried out result. This looks like a good approach. I grill bone-in thighs on the grill a lot. I prebake them on the grill inside a lasagne pan. This keeps them moist. I finish them by putting them directly on the grate to crisp up the skin. The cupcake method looks like a sophicated way to keep them partially immersed in liquid.

Great recipe Steve. I make baked bone in chicken thighs in the oven about once a week.325 convect .S&P, ranch powder. Start meat side up , flip half way and finish skin side up till crispy. super moist and juicy every time. I think you might have already done a similar recipe.

When I do BBQ chicken thighs or legs on the Recteq, I like to brine them in Wicker's for at least 8 hours. Since my wife doesn't care for the skin I season under the skin as well. I have been using a thin coating of mayonnaise as a binder
Brining is awesome, though I find this recipe doesn't require it to keep the meat super moist due to the way it's cooked in the molds with the broth.

I'm trying to figure out how to make my gas grill into a smoker. I'm not so sure how to do it though. That recipe looks fantastic! I really gotta figure out my gas grill/smoker situation! Thanks again, Steve!

I have experimented with makeshift smoking on my gas grill. First buy a bag of wood chips. Make a container for the chips. Easiest is to form a packet using aluminum foil. Add the dry chips. Wetting the chips is not recommended because it won’t smoke until the chips are dry enough. Seal the packet , punch a few holes in the top, and place on one of the burners UNDER the grate. Don’t place directly on the burner, but onto the flame diverter. Experiment with packet placement. An alternative to the foil packet is to purchase a smoking box. Mine is aluminum with a hinged lid and punched full of holes. The problem you will have is controlling the temperature. You have to experiment with the flame level such that the grill temp is low enough (under 300) but hot enough to get the chips smoking. I was disappointed with my attempts. I got smoke flavor, but the flavor was not strong enough for my taste. My wife bought me an electric smoker for my birthday last year, so I no longer attempt to smoke meat on my gas grill.

You could follow the same method and temperature as the smoker version. If you want a smoky flavor, you could brush the thighs with liquid smoke before applying the rub.

Is the hole in the cupcake pan absolutely necessary? All I have is metal pans and I’d rather not go buy a new silicone one just to poke holes in it. Maybe if you don’t poke a hole, also don’t add broth?
You will likely have dry chicken thighs then. You could certainly try using one of your metal pans to see how it works and then determine if it's worth buying the silicone muffin molds.
For the flipping, it might be easier to use a pair of chopsticks and roll them around like Takoyaki.
I had thought about that, but by the third thigh, I was a pro with the spoon. 😉
Why not just buy boneless skin-on thighs? Do you feel like the little bit of bone you leave in there gives them better flavor, some structure for pushing them down in the cupcake mold? I'd be thinking there was going to be some bone fragments in the chicken. All those questions!! Still it looks super good and cute!
1. I've not seen boneless, skin-on thighs.
2. Having a bone will always help maintain tenderness. Also, this recipe comes from the competition BBQ circuit, where having a bone is required.
3. There were no bone fragmets.
I have the same smoker, I love mine. I can't wait to make these cupcakes. I am getting ready to throw a pork butt on my smoker.

Why didn't you take out the whole bone? Seems like it might be easier.
I don't know that it would be. Also, once you carve off some of the meat, you can eat the rest like it's a baby back rib. Plus, this is how they are made for competition BBQ.

I suppose you could, if you felt that would be easier. I believe competition style thighs require that you leave the bone in, though. That allows you to finish eating the thigh like a baby back rib (off the bone).

BLOOD GLUCOSE DATA: (I put this comment on your latest video instead of your most relevant video, hoping to increase the odds of you seeing it.) Is there any way to download the continuous blood glucose data you collected while testing resistant starch data? I would find it interesting to integrate the data under the curve, which could be called mg-minutes. In other words, how much total work did your body have to do to get your blood glucose back to baseline? An extreme example: It would seem that a 15 minute spike to 20 mg above baseline (300 mg-minutes) would be less of an issue than a 10 mg spike for 90 minutes (900 mg-minutes). This integration could easily be done if your blood glucose device can download in, say, .csv or .xls format; the integration can be done in a spreadsheet. Don't send me this data - just askin'... | Thanks for your excellent work. I'm just starting to look into keto. You do a terrific job of collecting data scientifically, within your resources. I use Project Farm the same way, for almost anything I buy that he tests.

Does it look like a cupcake to you? Why mold ground beef into "meat balls"? Why attempt to create aesthetically pleasing food at all?
