Clams with coconut | Ameijoas com coco by Chef Rego from Goa

  • Fresh & locally available calms can be cooked in various ways, served with variety of accompaniments. Clams with coconut is a perfect blend of just the right spices and finished with coconut cream and fresh coconut to give it a nice balance. The sweetish flesh of the clams compliments this preparation perfectly. Do try it out yourselves.
    Ingredients
    Fresh clams with one shell - 50 to 60 nos
    Chopped onions - 2 nos
    Chopped garlic - 4 nos flakes
    Chopped ginger - Half inch in size
    Chopped green chillies - 2 nos
    Chopped tomatoes - 1 no
    Fresh grated coconut - 1 tea cup
    Fresh coconut milk - Half tea cup
    Red chillies whole dry - 3 nos
    Cummin seeds - Half teaspoon
    Coriander seeds - 1 tablespoon
    Peppercorn - Half teaspoon
    Turmeric powder - Half teaspoon
    Tamarind pulp - 2 tablespoons
    Fresh coriander leaves - 2 tablespoons
    Salt to taste
    Oil to fry

    God bless you, I am a senior citizen now but bought back old memories of my granny she always cooked treated when in season and l used to enjoy them she was an excellent cook all my grand aunts used to say Prim Lavin's cuisine is

    Chef Rego I still can smell the black Khube in my gradmas wood fired charcoal kitchen. We used to make in touli in an earthen ware pot. Pais of goan redrice was served at 10am. indeed .Its memories thought and overall the experience of a traditional goan cuisine. I still can imagine and feel them. Thank you chef for taking me back to my childhood memories. God bless take care.

    Thanks for reminding me of the black khube Chef Rego Patrao...when we were small I remember eating it..black khube are very tasty.
