You are a born teacher! This is how I make my Thanksgiving turkey each year. I can cook a 13lb turkey in less than a couple of hours. I will have to try it with chicken. Thanks!
Great video Marie. I only spatchcocked a chicken once. But like others have said you make it look so easy. I cook everything in my Ninja Foodi but a chicken fits fine in there. Can't tell you the last time I turned my oven on. It gets used for storage mostly. Thanks for the informative instructions.
Thanks so much Joanne! I think you would be hard pressed to cook a spatchcocked chicken in one of those, but you could if you cut it in half through the middle I am sure. I know I can roast a chicken whole and unflattened in my air fryer! xo
For added flavour, I like to add chopped herbs to the butter before I tuck the butter under the skin. I appreciate your washing your hands while working with the chicken - so often on line cooking shows make me cringe!
I know what you mean. I cringe as well. Raw chicken can make people really sick, and improper handling of it means that you can cross contaminate other foods, surfaces, etc. very easily with the juices. I am pedantic about that. Its probably the chef in me! Chopped herbs added with the butter are lovely! Thank you! xo
Thanks Marie, it’s so good to see and hear you. Maybe I can learn a few things so I can cook your fabulous recipes. I’m pretty off my game these days and need a good teacher like you. Cheers from London ON.
You make it look easy.. I've never cooked a chicken this way, will give it a try when it is cooler and better to turn the oven on to cook. Thanks so much for showing us how.
Ooooo looks delicious, Marie! Can't wait till our temps here in NM come down so I can use my oven and make this! Love the butter under the skin idea! 😋
Thanks so much. Trust me when I say I had my air con on while roasting these! Butter under the skin is a great way to flavor any type of roasted bird! xo
Seasoning looks awesome...and with the price now of any prepared food, it is so nice to think of doing this. I have done it once in the past, but I do not think it was done so nicely as you have showed us. Thank you!! Hugs, Elizabeth xoxo
Thanks so much Elizabeth! Every time someone handles the food we buy the cost goes up, as does the risk of contamination! It is much better to do these things ourselves and cheaper! I will do a video sometime on how to cut up chickens as well! So much cheaper! Xo
Marie I am loving your videos. I’ve made so many things from your cooking blog and enjoyed everyone. I’ve spatchcocked a chicken once before but usually forget each time, now I will definitely try it again.

You are going to have cooked chicken ready for a long time. But it makes it easier to cook all at once.
Yes, I do have quite a bit of cooked chicken now, and plenty of bones for soup! One of the hazards of the job I guess! lol xo

I’ve bought them already cut but never tried doing it myself.
Hopefully after watching this you will want to give it a go yourself! Xo
Can you do a video on quick breads. I struggle to get them cooked through in the middle.
Hi Zooballoo, I will bear your suggestion in mind! That can sometimes happen if you use the wrong size of a loaf tin. Watch this space! xo
