Filipino Micro Baker - Croissant Production

  • In January of 2020, my sister Alex asked to move with me and Nicole to help out at the micro bakery. I asked her what she wanted to help with and she said just whatever work in the micro bakery is.
    A month into assisting me, she decided to make croissants. First thing I asked her was 'WHY?' lol
    So what we did is we read and looked up recipes/processes and eventually settled with Tartine's croissant recipe with some slight changes in hydration and percentages.
    2 months ago, we decided to film what she does in the micro bakery and this video is the product of that.
    Alex is the pastry person of our little micro bakery. Cheers :)

    I admire all the hard work! It's my dream to start up a microbakery in my hometown in Ph one day. I hope you can show us the business side of the microbakery as well ( finance wise) Thanks for all the posts! It's very inspiring to watch 😊

    Any recommendations where to get bakery equipment (sheeter, chillers, oven haha)?

      Hello, so sorry for getting back to you so late! I bought most of the bakery equipment from Alibaba! :)
      Just make sure to ask the company (that you'll buy the equipment from) if they can ship to their partner warehouse in your country. Are you in the Philippines? I can recommend 2 companies I bought equipment from that have warehouses in Manila. :) - JC

      Hi Angelica! I'm not sure about the exact number but it's between 16-18 sqm according to our engineer friend. The kitchen tour sounds like a great idea! I am posting a video this week and that'll probably be my next video! Thanks a lot! 🙂🙏 - JC

    These look amazing! Is there commercial yeast in the finale dough or just in the poolish? Also did you lower or raise the hydration from tartines original recipe?

      Hey Adam! So sorry for getting back to you so late - we used to just use a starter and a poolish but when we started making 600-800 croissants every weekend on top of the breads, we started freezing them so we can bake in batches.
      What we noticed is that the leavening power of both preferments AFTER freezing isn't as strong so now we add additional yeast (we use active dry yeast) so they proof better.
      I lowered the hydration, Tartine's croissant recipe is way above the recommended hydration level for croissants so I've adjusted it to be 52% instead of Tartine's 60+ (I think). Cheers! - JC :)

    Hi. How do u clean your spiral mixers bowl? Mine cannot be removed. So I wipe it clean with soapy water and towel. I see you scrub with water. I like to do that too. How do u get all the water out? Tq ☺️

      Hi! So sorry for the late response - I use a sponge to get all the water out of the bowl. Sadly, there's no other way (at least for me). Cheers :)

      Hi i would like to share how i get the water out from the spiral mixer. Recently i discovered an aquarium pump! It is small and portable. People use it to drain water from fish aquarium when they want to clean it. It works great. But at the end still some small amout of water and then u will still have to use a sponge or microfibre cloth. Hope this will help 👍

    What a dream to have this kind of business and those equipmen.. I'm planning to have my own microbakery too but I don't know where to find legit shop to buy commercial use equipment and it's really expensive buying it here in PH compared outside. If you don't mind me asking where do you purchase your dough roller?

      Heya! Sorry for the late response - I bought it from Alibaba. They shipped it to a warehouse in Manila and I had it Lalamoved to our place. :)

    How much is a laminator in the Filipinos? In my area is around 5,000 usd with taxes.

      Hi Ana, I buy all my equipment direct from the manufacturer in China. So this laminator, for example, costs between 3500-4000 USD if I bought it locally. I bought this from a manufacturer I found on Alibaba for 1500 USD including shipping to the city near me because they have a partner warehouse there.
      Let me know if you need a bit more information on this and I just might make a video to walk people through on how they can DIY and go direct to the manufacturer to buy bakery equipment for less.
      I'm pretty sure the factories on Alibaba have warehouses in the US if that's where you're at right now. Cheers - JC

      Hi! Yes, we do - we don't have A/C in the workshop so we put everything in the freezer to cool them down faster. Cheers!

      Hi! I bought from 2 companies (R&M and Shineho). Will make a video Alibaba video soon. I'm using locally bought bread flour lang - they refer to it as first class. It's cheaper than APF and I'm used to it from making breads so I chose to work with bread flour. 🙂
