Back then I had a 10'' acer netbook, that I went to school with, and played quake 3 arena on, that thing was running windows 7 ''starter edition'' running one of the atom cpus.

They made A LOT of CPUs during the last.... over 800 CPU models since 1978
Use Windows 10 IoT Enterprise LTSC 2021, this gets Updates till 2032
