I’m going through a lean season also. I swallowed my pride and visited a local church food pantry. It helped me tremendously! I’ve had to go a couple times in the last year. I urge you to reach out for help. We all need it sometimes ❤❤

You could have used the oatmeal in your meatballs as a filler. You could also take your apples and make an apple crisp with the oatmeal. And the peaches I would have made a peach cobbler with the left over pancake mix. Put butter in a baking pan and melt, add the can of peaches with syrup to pan then top with pancake batter! I’m gluten free so I use oats for everything!! Like your video! I don’t know how you feed 4 boys with such a small amount of food!! When my boys lived at home I had to double everything. I felt like I cooked for an army!! Kyle is sooo cute! He cracks me up!! You did a great job stretching that out!!
Brooke, I Googled "Italian Potatoes and Tomato," and many recipes came up. You used past experience to make food today. Great job! I did that the other day with Tomato Bread Pudding. I had it once back in the late 1970's. I made the dish according to my memories. It came out just like I wanted. I like your style of thinking on your feet. Tonight, I'm having a baked potato with plain Greek yogurt, freshly grated parmesan cheese, roasted zucchini and carrots, and green beans cooked with a bit of onion and nutritional yeast and some Mexican cornbread. No meat 'cause I need to go to the grocery store. I don't feel like driving 10 miles to the store, so I eating from my fridge and pantry. Just making do with what I have. It's just me now; my husband is deceased (17 years), and the children are grown and on their own. I eat whatever I want these days. No worry about who likes what. The dessert will be the homemade blackberry cobbler with some cream I made the other night! I love "Great Depression Cooking With Clara," God Rest Her Soul. Simple is excellent. Great video, Brooke.

You want to make sure everyone has enough meat? No. You want to make sure everyone EXCEPT YOU has enough meat. That reminds me of my own mother. She has been gone for over 40 years but I still remember that when she fixed fried chicken for her large family (there were six of us children at home at that time) she would always say that the NECK was her favorite piece. I hate to admit how old I was before I figured out that she was doing what GOOD MOTHERS do to make sure their children have what they need and the neck was pretty much the only piece that was left after the rest of us got what we wanted. Bless her and bless you and bless all the REAL mothers out there who just automatically always put their children first. If I were not already a subscriber, that alone would have made me subscribe because you brought back such good memories of my mother!
We do, growing up we didn't always have meat as protein fried potatoes rice, gravy fried bologna sandwiches grilled cheese alot of other things. Homemade pancakes versus the box, homemade biscuits
Spam is the best when cubed and fried and then added to anything. Remember not to add salt to the anything becuz the spam is really salty. U can also soak and rinse the spam before frying. Just sayin' for those who need to mind their salt. Love this channel.
After you make your rice, then put it on a baking sheet and toast it in the oven until it’s golden brown. It is a game changer for fried rice. It helps the texture a whole bunch.
I honestly never paid attention. Probably 350 degrees for 15-20 minutes. Just watch it and take it out when the rice is slightly golden brown. It just helps dry out the rice and makes it firmer.

I use food and clothing banks in my city. It sure takes the sting out of food and clothing shopping. I find staple items like jeans, blouses and a sweater or two. Then, I donate items I'm tired of wearing, but they still have a lot of life left in them. I just found your videos, and I'm getting inspiration for ways to change things up and stretch the food, too! Thank you!
One or two eggs for your fried rice is a pantry item in my opinion, same as flour for gravy. It's only when you make a whole quiche or loaf of bread that they become grocery items. :D
This is my first time seeing your channel as I try to figure out how to cut grocery costs. I am so happy that you include the dinners you create with it. I see a lot of grocery videos where they show what they get, but not how they use it. I struggle to come up with meals looking at the ingredients. I would've never guessed what you were going to do with the tortillas, so thank you for showing us how to make ends meet and what you can do with the ingredients!!!
Also, you have a very nice family that includes cooperative children. I watch a lot of RUclips and these people overall have terrible children. Their children never work for anything, they beg for everything, and complain about everything that is done for them. I’m now 77 and my kids (1 daughter, 1 son) are adults now but when they were young they were very good kids, I was lucky I also had a wonderful husband. Your family appears to be very nice, count your blessings.

I’m so impressed with your cooking style. Not pretentious. Simple meals, creative from your fun brain and solid skills that I can learn from. My mother always worked full time so she was in a rush at dinner time. She did the best she could and we ate well. I like your style of fun and how you teach us some basics like how to keep the meatballs together with cornstarch. Who knew? And I’m trying the fried potatoes with marinara sauce for sure and sharing your video with my daughter. “ Food fatigue is real y’all!” I think we all see you as genuinely interesting. I remember in 2019, I went to North Carolina when my sister had her double lung transplant. We went to a Food Lion and I remember it so vividly, their brand of bread was .47 cents a loaf!
I remember before Aldi came to Michigan. We’d drive down to Toledo Ohio to go shopping there about once a month. The store was so busy that the line for the checkout started at the door and snaked through the aisles and if you missed something when you passed it you were out of luck.😂
We don’t get bags unless we buy them. I have bought too many. Now it’s only the expensive ones or paper. I often just load stuff loose in the truck and have to chase it when I get home to my bags and totes. Extra careful not to leave anything perishable under a seat!

You are very smart with choices and stretching your dollars. I'd love for you to do a series on restaurant copycat dishes on a budget. Some that we do are Chilli's queso dip, Outback Alice Springs chicken, McAlister French dip sandwiches & McAlister Ruben (I leave the sauerkraut out of mine), Panera broccoli & cheese soup, etc. I saw the KFC bowls...would love to see more content like that.

You could’ve made five pieces of cinnamon toast, and then top it with the fried apples. That sounds good. This whole video was awesome. I know back when you were doing the fifth day I figure it out and it was a little over two dollars per person per day for the five days so it’s much less if you’re doing six or seven days, this is a great great video.
We called it crazy supper night when it was make it to payday! One thing we discovered was hashbrowns, piece's not shredded, onion, and hotdogs , fried up it margarine served with ketchup was a fav that today we call the poor man's feast. Grew up in a fishing town, hard times we never apparent because of the creativity of meals. Keep smiling and enjoy the holidays.
I just found you. To be honest. I would give you money to cook for me if we lived closer. I am happy to say I won't starve next week because of your videos. I have a local grocery store, a dollar tree, a piggly wiggly, a small wallie world, 2 dollar trees, and a small mom & pop grocery store all centrally located. When we first moved to this town my husband asked why i'd take so long inside. My answer : i'm doing recon. ☺️ And as inflation has made things more expensive it really helps with knowing what items cost

Thank you for using your pantry items, I've been saying that because you buying stuff you dont need is stopping you from getting something else you might have wanted or needed. Using your pantry items will give people an idea of what to keep stocked up on. I've also suggested using your garden items and of course your eggs. You work hard to keep your garden producing and it also shows people how to save by growing their own food. There are thousands of free videos, books (free or cheap) and websites to show you how to have a garden even if you don't have a lot of space.
Best video I’ve seen! $45 is realistic for a lot of families. My cousin only gets $23 in food stamps a month and is drawing a little less than $900 month in disability; he had a stroke and had to quit working after 40 years. And yes, use churches or food banks, whatever it takes. Fantastic job, bestie 👏🏻

Just want to put this out there. I am a retired SW and I had clients in the same boat. They would get meals on wheels as well since they are like TV dinners they could freeze them. Disabled and under 65 should qualify simple application for free meals. Also it is delivered once a week.

I make oven roasted potatoes with carrots and use tomatoes on top with Italian seasonings olive oil. Can serve on side with any meat or add cheese over roasted veggies

@@bonnyc392 yes, I totally agree about making bread. I buy pound bags of yeast, so a loaf of bread can be made with a pound of flour and less than 10 cents for yeast. I usually make my bread 50/50 whole wheat and white unbleached flour, like you do. Homemade bread elevates any meal. It can even be a meal. A pound of (relatively) inexpensive white All-purpose flour will have 40-50 grams of protein, and I think it's about 1400 calories. That's enough to get you through an emergency day. I always have flour in the house. It can bulk up a meal, or be the basis for one.

I noticed i have started trying to guess what you're going to make out of the ingredients you have, but you continue to suprise me 😊 i thought you were going to make gnocchi, but the fried potatoes with marinara is a much easier option i will definitely be trying. I also thought that the last few bread slices could have made some cinnamon sugar toast that could have stretched the pancakes/fried apple vibe (but looks like the mac and cheese was enjoyed thoroughly!) Love the long videos, and LOVE your glasses!!

I watched a channel the other day which did $5 meals for 4 people. Her recipe looked good - a curry with rice. However, she called for what are expensive ingredients for many people - Coconut Milk, Jalepeno Pepper, Bay Leaves and some other seasonings that seem costly. Thank you for keeping your recipes realistic for those of us who cook on a budget.
Curry with rice would be more like a $10 meal or less depending on where you’re located. If you get the curry cubes ($2.99 at my Walmart), get a couple potatoes and a pack of baby carrots, you have curry. Protein is optional as is Coconut milk. Then use whatever rice you have on hand. Leftovers make an excellent fried rice. I always keep those curry cubes in my pantry for when I’m craving it.
Dear Brooke and Dusty, I loved it. I love your boys too. They are getting so big. I'm done with chemotherapy and radiation. I've started immunotherapy infusions this month. Cancer is down to half the size with hollowed out center in the tumors with dead cells, my doctor seems pleased so far. My husband, Josh and I thank God and put out faith in God he has control. You my friends have helped me so much by budget planning, survival supplies and pantry. I'm finally starting to live again. God knows going from bread winner to making nothing hurts a household. If I am not going out, I will stay in my Jammies all day, and when I am feeling really lazy I will have a nice hot bath and put new jammies on...lol. Just a heads up, that cheese grater thing you have..you can also use it to make those bread crumbs...works like a charm.....

Hi from NZ bestie! Sometimes if I have left over fried rice, I add it to the ground meat when I make meatballs or patties. It adds flavour and helps hold the meat together. You can also add egg or a bit of milk or water if you want to. Love your channel.😊🎁

Anyone else ever put peanut butter on their pancakes? That's how my mom showed us to eat them when I was a kid. The peanut butter was a great way for us to have protein if mom didn't have breakfast meat on hand. A diced apple and some cinnamon in the oatmeal will make it a bit more interesting than plain. The apple can be cooked down a bit in the water you boil before adding the oatmeal. Mmm!

Excellent food choices. The only items I would have done different is I’d have got an 18 ct eggs and not the pancake mix and syrup. You can make pancakes from pantry staples and I consider pancake syrup a staple just like soy sauce, ketchup, mayo, etc. My gang loves eggs and potatoes for breakfast or brinner. I tried to do a follow along shopping list using online grocery shopping, and not using walmart. I made a couple of substitutions, and then wrote down your meal plans with a couple of different meals using the substitute foods. It's very helpful to me and others that you make these videos showing us that we can still make lots of healthy foods that taste good on a small budget

I use oatmeal instead of breadcrumbs in my meatloaf most of the time. Those potatoes look yummy! They would make a great side dish along chicken, or pork chops, any meat really!
Beans, fried taters and cornbread is my all time favorite meal! I love it when it’s fresh out of the garden. I also like a beefy tomato sliced, a couple of slices of mild cheddar and green onion on the side. 😋 I just cooked a pot of beans and some pork chops.
Unfortunately for me our grocery budget is 40.00 for an entire month and let me tell you that you impress me with how you stretch a buck and not many people do, growing up poor myself and knowing fifty different ways to stretch pintos definitely helps

That would be great as we are elderly and on fixed income and we eat lots of rice ,beans ,and taters I am trying to figure out how to incorporate some meat into it as of right now we can’t afford meat because out here in the sticks they really don’t have a lot to choose from and we can’t afford gas to get to the city, we also don’t get food stamps or get food from any food bank. I hate to admit how old I was before I figured out that she was doing what GOOD MOTHERS do to make sure their children have what they need and the neck was pretty much the only piece that was left after the rest of us got what we wanted. We do, growing up we didn't always have meat as protein fried potatoes rice, gravy fried bologna sandwiches grilled cheese alot of other things. Homemade pancakes versus the box, homemade biscuits
Another good affordable fried rice option, is spam fried rice. Cube the spam up and then fry it with the veggies then add the rice and eggs. So yummy.

Spam is the best when cubed and fried and then added to anything. Remember not to add salt to the anything becuz the spam is really salty. U can also soak and rinse the spam before frying. Just sayin' for those who need to mind their salt. Love this channel.
Oh yes, you get a few meals out of a can of spam. Rice, fried potatoes, soup beans. Just add a bit of spam and you have a yummy meal.
I love this and we also add frozen peas to ours.
After you make your rice, then put it on a baking sheet and toast it in the oven until it’s golden brown. It is a game changer for fried rice. It helps the texture a whole bunch.

How long and what temp
I honestly never paid attention. Probably 350 degrees for 15-20 minutes. Just watch it and take it out when the rice is slightly golden brown. It just helps dry out the rice and makes it firmer.

I use food and clothing banks in my city. It sure takes the sting out of food and clothing shopping. I find staple items like jeans, blouses and a sweater or two. Then, I donate items I'm tired of wearing, but they still have a lot of life left in them.

One or two eggs for your fried rice is a pantry item in my opinion, same as flour for gravy. It's only when you make a whole quiche or loaf of bread that they become grocery items. :D
This is my first time seeing your channel as I try to figure out how to cut grocery costs. I am so happy that you include the dinners you create with it. I see a lot of grocery videos where they show what they get, but not how they use it. I struggle to come up with meals looking at the ingredients. I would've never guessed what you were going to do with the tortillas, so thank you for showing us how to make ends meet and what you can do with the ingredients!!!
Also, you have a very nice family that includes cooperative children. I watch a lot of RUclips and these people overall have terrible children. Their children never work for anything, they beg for everything, and complain about everything that is done for them. I’m now 77 and my kids (1 daughter, 1 son) are adults now but when they were young they were very good kids, I was lucky I also had a wonderful husband. Your family appears to be very nice, count your blessings.

I remember in 2019, I went to North Carolina when my sister had her double lung transplant. We went to a Food Lion and I remember it so vividly, their brand of bread was .47 cents a loaf!
I remember before Aldi came to Michigan. We’d drive down to Toledo Ohio to go shopping there about once a month. The store was so busy that the line for the checkout started at the door and snaked through the aisles and if you missed something when you passed it you were out of luck.😂

We don’t get bags unless we buy them. I have bought too many. Now it’s only the expensive ones or paper. I often just load stuff loose in the truck and have to chase it when I get home to my bags and totes. Extra careful not to leave anything perishable under a seat!

You are very smart with choices and stretching your dollars. I'd love for you to do a series on restaurant copycat dishes on a budget. Some that we do are Chilli's queso dip, Outback Alice Springs chicken, McAlister French dip sandwiches & McAlister Ruben (I leave the sauerkraut out of mine), Panera broccoli & cheese soup, etc. I saw the KFC bowls...would love to see more content like that.

Growing up fried apples and sausage was a treat. It does take spices, but I guess you could buy apple pie spice combo.

You could’ve made five pieces of cinnamon toast, and then top it with the fried apples. That sounds good. This whole video was awesome. I know back when you were doing the fifth day I figure it out and it was a little over two dollars per person per day for the five days so it’s much less if you’re doing six or seven days, this is a great great video.
We called it crazy supper night when it was make it to payday! One thing we discovered was hashbrowns, piece's not shredded, onion, and hotdogs , fried up it margarine served with ketchup was a fav that today we call the poor man's feast. Grew up in a fishing town, hard times we never apparent because of the creativity of meals. Keep smiling and enjoy the holidays.

I just found you. To be honest. I would give you money to cook for me if we lived closer. I am happy to say I won't starve next week because of your videos. Learning to cook and going to add to my pantry as I can. Not sure if I can get things as cheap where I am at. We only have Family Dollar and a local store here. 45 miles one way to the other stores. I hear ya about using several stores to get the best prices. I have a local grocery store, a dollar tree, a piggly wiggly, a small wallie world, 2 dollar trees, and a small mom & pop grocery store all centrally located.
When we first moved to this town my husband asked why i'd take so long inside. My answer : i'm doing recon. ☺️

Thank you for using your pantry items, I've been saying that because you buying stuff you dont need is stopping you from getting something else you might have wanted or needed. Using your pantry items will give people an idea of what to keep stocked up on.
I've also suggested using your garden items and of course your eggs. You work hard to keep your garden producing and it also shows people how to save by growing their own food. There are thousands of free videos, books (free or cheap) and websites to show you how to have a garden even if you don't have a lot of space.
You can use flower pots, 5 gallon bucket. To garden in.
I am surprised at the Aldi's .. I am in Michigan and ours are fully stocked all the time . Bagels make great pizza.. Love your videos..

My cousin only gets $23 in food stamps a month and is drawing a little less than $900 month in disability; he had a stroke and had to quit working after 40 years. Just want to put this out there. I am a retired SW and I had clients in the same boat. They would get meals on wheels as well since they are like TV dinners they could freeze them. Disabled and under 65 should qualify simple application for free meals. Also it is delivered once a week.

I make oven roasted potatoes with carrots and use tomatoes on top with Italian seasonings olive oil. Can serve on side with any meat or add cheese over roasted veggies

@@bonnyc392 yes, I totally agree about making bread. I buy pound bags of yeast, so a loaf of bread can be made with a pound of flour and less than 10 cents for yeast. I usually make my bread 50/50 whole wheat and white unbleached flour, like you do. Homemade bread elevates any meal.
It can even be a meal. A pound of (relatively) inexpensive white All-purpose flour will have 40-50 grams of protein, and I think it's about 1400 calories. That's enough to get you through an emergency day.
I always have flour in the house. It can bulk up a meal, or be the basis for one.
Peel and cut apples mix up pancake batter put apples in batter then fry when it's done put cinnamon sugar on it

I noticed i have started trying to guess what you're going to make out of the ingredients you have, but you continue to suprise me 😊 i thought you were going to make gnocchi, but the fried potatoes with marinara is a much easier option i will definitely be trying. I also thought that the last few bread slices could have made some cinnamon sugar toast that could have stretched the pancakes/fried apple vibe (but looks like the mac and cheese was enjoyed thoroughly!) I watched a channel the other day which did $5 meals for 4 people. Her recipe looked good - a curry with rice. However, she called for what are expensive ingredients for many people - Coconut Milk, Jalepeno Pepper, Bay Leaves and some other seasonings that seem costly. Thank you for keeping your recipes realistic for those of us who cook on a budget.
Some days you can luck out and find coconut milk at the dollar tree!
If you have a Sprouts grocery store, they will put their Coconut Milk & Coconut Cream on sale for 2 for $2. I stock up on them.

Curry with rice would be more like a $10 meal or less depending on where you’re located. If you get the curry cubes ($2.99 at my Walmart), get a couple potatoes and a pack of baby carrots, you have curry. Protein is optional as is Coconut milk. Then use whatever rice you have on hand. Leftovers make an excellent fried rice. I always keep those curry cubes in my pantry for when I’m craving it.

Dear Brooke and Dusty, I loved it. I love your boys too. They are getting so big. I'm done with chemotherapy and radiation. I've started immunotherapy infusions this month. Cancer is down to half the size with hollowed out center in the tumors with dead cells, my doctor seems pleased so far. My husband, Josh and I thank God and put out faith in God he has control.
You my friends have helped me so much by budget planning, survival supplies and pantry. I'm finally starting to live again. God knows going from bread winner to making nothing hurts a household. Anyone else ever put peanut butter on their pancakes? That's how my mom showed us to eat them when I was a kid. The peanut butter was a great way for us to have protein if mom didn't have breakfast meat on hand.
A diced apple and some cinnamon in the oatmeal will make it a bit more interesting than plain. The apple can be cooked down a bit in the water you boil before adding the oatmeal. Mmm!

Excellent food choices. The only items I would have done different is I’d have got an 18 ct eggs and not the pancake mix and syrup. You can make pancakes from pantry staples and I consider pancake syrup a staple just like soy sauce, ketchup, mayo, etc. My gang loves eggs and potatoes for breakfast or brinner. I tried to do a follow along shopping list using online grocery shopping, and not using walmart. I made a couple of substitutions, and then wrote down your meal plans with a couple of different meals using the substitute foods. It's very helpful to me and others that you make these videos showing us that we can still make lots of healthy foods that taste good on a small budget

Those potatoes look yummy! They would make a great side dish along chicken, or pork chops, any meat really!
Aldies use to have bread for a quarter and it was the softest bread you could get very close to bunny bread people loved it!

Beans, fried taters and cornbread is my all time favorite meal! I love it when it’s fresh out of the garden. I also like a beefy tomato sliced, a couple of slices of mild cheddar and green onion on the side. 😋 I just cooked a pot of beans and some pork chops.
My grandma makes this all the time. Bell peppers and onions are usually cooked in the fried potatoes.
