Well Justin I finished with Vegetarian Enchiladas. My daughter told me to use your sauce recipe. She liked it better . No more can sauce for me. It will be easier . I have all ingredients in my pantry. I started cooking at 4:30 am. First Pico de Gallo. Then Mushroom rice with veggie broth. Next Quinoa Greek salad. I had a hard time finding Quinoa where I live. Ended with Vegetarian Enchiladas. I made dinner for us , then my daughter and son in law. Then my Vegetarian Son Your recipes are so easy thank you I couldn't have done this without your great recipes and help.
I made these tonight and they were so good! The best vegetarian enchiladas I’ve ever had. I’m glad there are leftovers because I can enjoy them tomorrow too!

I made it today using black beans and all frozen veggies (that's what I had available)-- corn, onions, bell peppers, and spinach. It feels good knowing that I can now make my own homemade enchilada sauce. Will make again. Thx for sharing!

Made these last night and my family and I loved it. A staple dinner for us now. Tks.
I made these this week. Turned out great. Excellent flavor profile. The combo of cumin in the sauce and in the filling gives a nice zing. Warmed up in the oven the next day for lunch was excellent as well.
I m not so much into cheese ,but for my take on this dish ,minus the corn and flour will replace with psyllium husk, your version so far will be my guide thank you .It is quick ,clear simple and looks appetizing.

This was delicious. I made a couple of changes. Used about half the oil and added nutritional yeast to sauce to give a cheese flavor. Did not use any dairy. I’ll make this again for sure.

I’ll have to give your sauce a try. I made one once and it was horrible and the jar ones are not much better! Although when I make the baked enchiladas, I like using the corn tortillas it kind of gives it a masa vibe!
