Thank you SOOOOO much for this and the goulash recipe! I went to Prague last summer and fell utterly in love with the cuisine. The goulash was amazing, and the dumplings turned out great! I don't suppose you have a recipe for the Tomato Soup too?
Mooooc dekuju za vyborne video. This is the first time I've tried knedlik as I was always nervous to give it a try. Since I didn't have the Wondra flour, I mixed All purpose flour with Farina ( as someone mentioned it), it was stickier so I was adding a little more flour. I also added small squares of ciabatta (or roll) that I cut the day before. And it turned out amazing!!! Thank you, I will be checking more of your videos now on.
I made this recipe using both methods with delicious results. The steaming method was easier for me and the dumplings looked nicer too. Thanks for showing us both ways.
Been in Prague last weekend and to be honest I prefer Orlickie Hory 😉 (Orlickie Mountians) and the surrounding areas. But I have pretty close to Czech Republic (I'm from Gliwice in Upper Silesia, Poland) and I visit Czech as often as I can as there are three best cuisines in the world, and nothing can compare with that. Italian, Polish and Czech (in random order). Srdecne pozdravy! 😀

Absolutely AWESOME! Also, thank you so very much for the detailed information regarding flour types and explanation in English Language 👍💐 No Wondra flour here, but thankfully, there are European shops so I can buy Krupczatka flour. I've been looking for this particular food item for years, after having taste it once on my trip to Europe . Just couldn't remember what it was called. Now I know :-)
If you have leftover dumplings, cut them to circa 1-inch cubes, fry them on pan, when they get slightly crispy, add mixed egg (salt, pepper). Eat with ketchup or moustard. Easy to cook dinner.
Whenever I used to visit Koprivnice / Frenstat pod Radhostem I always had one meal of goulash and dumplings washed down with Krusovice pivo - nice strong cesnekova polevka to start the meal.
Thanks for sharing with us ~ I remember my Mother using a piece of white thread and pull underneath pull the thread up and criss cross your dumpling and slice this way there is less tear on the Dumpling ~
It is so great at 04:42 that she does NOT use plastic wrap to cover the dough while it rises. There was a time (not so many years ago) that there was NO plastic wrap. Before that people simply did as she does here... they used a towel. You would have to be living on the moon to not be aware now of how bad plastic is for our environment. We all want to see change and that change can begin in small ways... Lose the plastic wrap! Thank you "Czechcookbook" for being responsible and showing us how "traditional ways" can help save the planet. (We all must do our parts).
I also tried using all purpose and dumplings were nice and looked fluffy. But they were very chewy. Using Wondra flour they fall apart in your mouth. For me it is worthy to use Wondra for that amazing texture and taste.
I made these dumplings on Monday to serve with Beef Tenderloin with cream sauce. As you promised, easy to make (used Wondra). Dumplings are great on their own too, re-heated per your RUclips Video.
Jemné domácí houskové knedlíky, Dumpling is a broad class of dishes that consist of pieces of dough and in this recipe it isn't. Not pieces of dough, but a complete cooked loaf of bread. By the way, delicious with goulash, the Czech way.
In Chicago, we can find these in the frozen section of our grocery stores, but given how many people here come from Central/Eastern Europe (including myself), I’m not surprised
You mentioned an oval pot you use to cook all 3 at the same time. Can you tell me where to buy it? I made this last night and your descriptive recipe to follow made it easy to follow and they turned out delicious!

Ahoj! Diky moc za recept! Mám otazku. About how mAny portions do you get from this recipe? Sorry, I am still a beginner with Czech language but I love it and the food also!
How do you make Wondra flour at home? you can create a Wondra or instant flour substitute by combining 2 cups of flour with 1 teaspoon of corn starch. Mix the ingredients together and sift through twice to aerate and loosen the flour. Use it right away, or store the mixture in a cool, dark place for future use.
Hm that doesn’t sound right. Wondra flour has different coarseness. You can’t change all purpose coarseness by adding corn starch. Wondra is grounded differently. It is more loose. If you look at wondra you will understand that it is completely different from all purpose flour.
Hi, thank you for the recipe! The first time I made them they turned out perfect, but this time they burst/cracked (still delicious tho 😊). Do you know why that could be?
Ahoy... Question ... when rising with the oven method, you did not specify if you let your oven REACH 175 degrees or just turn it on and let oven get warm. My oven lowest setting is 200 degrees, so I did not wait until it reached 200 because I felt it could be too warm. This method also made a kind of crust on my ball of dough. Please, answer this... If I want to just let rise by normal means, is there anything else I need to do or just leave it alone in a warm room for 1-2 hours? Also, how do I know when it has risen enough? Mine are smaller than yours, and 1-2 hours is so random.Thank you for the videos.. I am learning after all these years to cook Czech food because my mom is gone and I miss her and it so much.
Dani Loves Coco Ahoj Dani, I let my oven reached 170F and turned it off. You don’t have to wait until it reaches that temperature. Slightly warm is fine. 200F might have been too much since it baked the dough little bit. You need to have the dough double in size. Just to be sure let it rise 2 hours. It won’t hurt the dough. Warm room is fine too. Doesn’t have to be oven.
Mom made Šišký. Our family comes from severní Morava (Frenstat area). I know she boiled. Outside texture was fluffy and slick. Middle was like the dumpling. Is this the same but boiled for shorter time. Dekuji.
Hi was just looking at your recipes again which are great! Just wondered, do u still have your store and are u still selling your cookbook? Also here u showed us 2 different methods. Which one do prefer or think that works better? I wanted to make the Svickova with the dumplings.
Bianca Hotca hi Bianca, yes I still sell my cookbook. I sell them on Amazons. Just do search for Czech Cookbook 😊. Probably Amazon UK would be the best option since you are in Romania. 😊 amzn.to/2wrm9xI I like to steam them which is less work. 😊
@@czechcookbook Well I'm over the pond : )) Funny thing is yesterday I got all the ingredients to make this but several places I went to don't have yeast anymore. Lots of basic goods missing off the shelves these days. I'll have to ask my mom for some : )) I don't know how it is where u are, but some things been flying off the shelf
Oops I forgot. Of course now I remember you aren't in Romania. :) Amazon.com sells my books. :) New shipment just arrived. I am sorry to hear you can't find all the groceries. I heard about TP shortage in USA. Here in CZ we have shortage of yeast, but now it is getting better. I was able to find dry yeast last week not the fresh one, which is fine with me since I only use dry. I hope they restock soon in USA.
Is it something you can eat by itself? Also how long can you keep it? My czech partner is craving some dumplings so I want to surprise him, thank you for the video :)
Pozdrav z USA. Muzes me poradit?
I made these dumplings with spelt flour, but followed all other ingredients and directions exactly. The flavor was delicious, but the bottom of my dumplings were soggy. Any recommendations on how to remedy this? Thank you!
@@czechcookbook Will try this! I love your channel! In June, I will be having a Czech dinner and will use your recipes. The menu is Goulash, dumplings, garlic spread, strawberry cake and a salad. The only recipe I had to look elsewhere was the salad because I wanted just fresh veggies. If you have an idea for an authentic recipe that would go with my menu, I’d love to use it. Thank you! 😊
Thank you very much for the recipe! I always wanted to do it, but I never knew how, the only problem is that in my country we don't have this type of flour, is it very different to make it with normal wheat flour? Thank you so much!
@@czechcookbook Thank you for replying to my message! I live in Brazil and I think wheat flour here is very bad, unfortunately! And that type of flour that you mentioned in the video has never heard of, would it be a purer flour, with more gluten or less processed? I hope to be able to make this bread one day, tried it once and never forgot it, thanks again!

I make it with all purpose flour here in USA FOR 30 years and they come out fantastic - I steam them not boil them ....😊 I do always double batch and freeze them ...they are like fresh even re heated!
@@czechcookbook I came across this from reading an autobiography by the Orcadian ( Islands off the North coast of Scotland ) poet Edwin Muir from when he live in 'Czechoslovakia after the first world war - so this is sheer historical curiosity. It does look as though is has the texture and consistency of bread but I must try it . Thanks very much for your excellent demonstration .
You say you use 3 different types of flour,,,but cant understand what kind you say,,,in any case,,,when my mom made these ages ago for us kids I`m sure she only used AP flour ONLY,,,,,,we were lucky to afford that flour
It all depends on coarseness of the flour. Wondra works the best. You can make dumplings from AP but they will be chewy. Wondra makes them fall apart in your mouth and so fluffy and delicious. Difference is big in my opinion. Dumplings from AP were pulling my teeth.
RMG Did you mean Central European Women or are you referencing Russian and Ukraine Women? This is a mine field I do not wish to walk into . . . good luck.

@@czechcookbook Thank you so much.
Mom made Šišký. Our family comes from severní Morava (Frenstat area). I know she boiled. Outside texture was fluffy and slick. Middle was like the dumpling. Is this the same but boiled for shorter time. Dekuji.
Hm I would say different dough. I have a recipe for gnocchi, but that is probably different too.
I am making these! Yum!
:)
Is this an updated recipe? as I am sure you have uploaded a video of bread dumplings before
Yes it is updated dumpling recipe. Easier to make with no soggy or deflated dumplings. I also have Bread dumplings recipe that is still the same.
Ahoj, Kristýno! Právě jsem přečetl recenze knihy v Amazon. Zdá se, že je šlágr, blahopřeji! - JIm v Connecticutě
Děkuji ☺️ Ano většina je z ni nadšena. 😊
can you use a regular hand mixer if you don't have a kitchen aid big mixer
You can mix it with your hands same way like our grandmothers. ;)
So do you serve goulash with these dumplings or the potato dumplings?
Goulash is best served with these.
I know this is a few years later but how long do you mix in stand mixer with hook
10 minutes 😊
Is it something you can eat by itself? Also how long can you keep it?
My czech partner is craving some dumplings so I want to surprise him, thank you for the video :)
Byt itself it is very plain but you can definitely eat it. It will keep in the fridge about 5 days, but will dry some. They also freeze very well.
Pozdrav z USA. Muzes me poradit?
@@czechcookbook Diky :)
I made these dumplings with spelt flour, but followed all other ingredients and directions exactly. The flavor was delicious, but the bottom of my dumplings were soggy. Any recommendations on how to remedy this? Thank you!
Better to use steamer. 😊
Thank you! 😊
@@smpettibone It all sounds amazing! :) I don't have a recipe for salad, but in the future will ave cucumber salad.
Thank you very much for the recipe! I always wanted to do it, but I never knew how, the only problem is that in my country we don't have this type of flour, is it very different to make it with normal wheat flour? Thank you so much!
Where do you live? The main thing is that the white flour needs to be more course. Whole wheat is still too fine and won’t work.
It is white flour that is more grainy/course. Not as fine. If you have polish store somewhere they sell Krupczatka, which works great.
@@czechcookbook ok I will try, thank you so much!
@@czechcookbook COARSE :D
Does anyone from argentina know what kind of flour can be used here?
So you don't NEED a steamer?
No. They can be cooked in boiling water.
@@czechcookbook Moc dekuji .Tak to zkusim z polohrube .
😉 No já bych spis dala tu hrubou i když upřímně ta Wondra dělá lepší knedlíky.
after i cut the dough into three pieces can i save this dough to cook at a later date?
I wouldn’t recommend it since it will keep rising and can over rise and deflate. You can cook them all and freeze afterwards, which is what I do.
In Germany, they eat these with a type of tomato sauce, do you happen to know the sauce ??
Czechs make this one www.czechcookbook.com/sweet-tomato-sauce-rajska-omacka/ I am not sure about Germany.
@@czechcookbook that looks like it. Thank you very much
👍🏻😊
Is it ok to use a good processor to make the dough?
Monochrome I wouldn’t recommend food processor since that is for chopping and shredding or slicing not for mixing the dough.
Can it be frozen for later?
Yes after they are cooled off you can freeze them.
I am very very surprised to see how similar it is like the traditional Chinese steamed buns, exactly the same, when I visited Prague years ago.
Really? How interesting.
Here in the Czech Republic, I should just use Hruba Mouka, right?
Yes :) I made them using hruba mouka while I am now in CZ and they turned out amazing.
@@czechcookbook - thanks!
@@czechcookbook Ano pouzil. Take mi to moc neplavalo.
Drzim palce!
Do you know how the dumpling would change if you use regular all purpose flour?
I tried to use all purpose flour. They looked fluffy and beautiful but were very chewy. 😕
I make it with all purpose flour here in USA FOR 30 years and they come out fantastic - I steam them not boil them ....😊
I do always double batch and freeze them ...they are like fresh even re heated!
Yes freezing is a great way. I always make plenty and freeze them. :)
Díky moc everyone 😁
WHERE DID YOU GET YOUR STEAMER POT?
I got that one shipped from China. I saw some on Amazon. Here under the video I have a link. www.czechcookbook.com/dumplings-domaci-knedliky/
THEY GROW SO HUGE
Yes :)
Love potato dumplings the best too with a pork roast and gravy.
Yes those are delicious. :)
Wich taste better ?
Do you mean which dumpling? If regular or bread dumpling? I like both but make more often regular one since those go with more dishes.
@@czechcookbook no i mean Is the steamed one ore the cooked one better ?
Hier könnte Ihre Werbung stehen steaming is better and easier. In the water they can be little bit wet.
Where can I get ‘Wondra’ flour
HELENA KRATOCHVIL if you live in USA you can find it in Walmart for example.
Okej, takže recept na knedlíky už uploadovat nemusím 😁 pěkné video
Dekuji :)
Boiled bread ??
It isn't bread but dumplings. ;)
@@calum66 In some cultures this actually would be considered bread. :) It is very delicious. :)
You need to slice the dumplings to show us how it is inside.
You need to fast forward to 13:27
You say you use 3 different types of flour,,,but cant understand what kind you say,,,in any case,,,when my mom made these ages ago for us kids I`m sure she only used AP flour ONLY,,,,,,we were lucky to afford that flour
It all depends on coarseness of the flour. Wondra works the best. You can make dumplings from AP but they will be chewy. Wondra makes them fall apart in your mouth and so fluffy and delicious. Difference is big in my opinion. Dumplings from AP were pulling my teeth.
Thank you very much.
They are called “Knedlikey” not dumplings :).
I always use English and Czech name as you can see in the title of the video. Knedliky is there as well.
Central European women are the most beautiful women in Earth
Aww! Thank you ☺️
I don’t even cook haha
😀
RMG Did you mean Central European Women or are you referencing Russian and Ukraine Women? This is a mine field I do not wish to walk into . . . good luck.
I know Cyril. We are little more sensitive to not be referred as Eastern European, but I took it as a compliment. 😊 That is why I didn’t say anything about it.
At si to testo vezme kolik mouky bude chtit. Kazda mouka jinak saje. Tak drzim palce!
@@czechcookbook nakoniec sa mi to podarilo 😊 ked mi cesto nakyslo s vlhkymi rukami som vytvarovala knedliky aj ked bolo cesto stale trosku lepkave ale ked som ich naparila tak vysli velmi pekne a dobre 😊
