材料 Ingredients
大地魚乾 1條 / 1 dried flatfish
櫻花蝦 1湯匙 / 1 tablespoon dried sakura shrimps
白蘿蔔 1斤4両 / 750g radish
芹菜 1棵 / 1 stalk Chinese celery
薑 3片 / 3 slices ginger
水 1.5公升 / 1.5L water
調味料 Seasoning
糖 1/2茶匙 / 1/2 teaspoon sugar
鹽 3/4茶匙 / 3/4 teaspoon salt
胡椒粉 少許 / ground white pepper, to taste
做法Method
1.用濕布輕抹大地魚乾,撕成小件,用白鑊細火烘至金黃色,備用。
Gently wipe the dried flatfish with a damp cloth. Tear into small pieces. Roast the fish pieces over low heat in a dry wok until golden brown. Set aside.
2. 蘿蔔去皮,洗淨,切塊;大地魚起肉;芹菜洗淨,切段。
Peel and rinse the radish, and then cut into wedges. Pick the meat off the flatfish. Rinse the Chinese celery and cut into sections.
3. 凍鍋落油,中火燒熱鍋,先下薑片、大地魚和櫻花蝦爆香,再倒入1.5公升熱水,煲滾後轉中小火煲20分鐘,備用。
Add oil into a cold pot and heat it over medium heat. Sauté the ginger slices, flatfish and sakura shrimps until aromatic. Pour in 1.5L of hot water and bring it to a boil. Simmer over medium-low heat for 20 minutes. Set aside.
4. 將魚湯內的薑片、大地魚及櫻花蝦用篩仔細隔走,加入蘿蔔。煮滾後再轉小火炆約半小時,下調味料煮滾,最後加入芹菜拌勻即成。
Sieve the gingers, flatfish and sakura shrimps carefully away from the fish soup with a mesh strainer. Add radish in the fish soup and bring it to a boil. Simmer over low heat for half an hour. Add seasoning and bring it to a boil again. Finally add Chinese celery and stir.
