How to make Venison summer sausage, start to finish

  • In this episode...
    It's winter time here and in the Northeast, if we aren't hunting, well, we are staying inside:)
    And if we are stuck inside...might as well make some tasty venison summer sausage from the amazing deer we have been able to harvest this season so far.
    Sausage is a labor of love, as it is a lot of work and time consuming process, but the bounty is amazing.
    In this video we will show you how we make our summer sausage from start to finish and hopefully give a few of you who have been on the fence about taking on such a job, the kick in the butt to get it done.
    I used to take my meat to a processeor, but once I found out how easy it is, never again!
    I hope this helps some of you who are new to processing your own meat as many before us on RUclips helped us find our way as well.     Make my recently before Christmas first time turned out great and plan on make another one again in spring this time need get dried jalapeños 👍

      Hey Chris, yea the jalepenos add a nice flavor and not really much kick so normal folk can still eat them! Was passing some out today at football to some dad's! Fun to be able to share with others also.

      Ah man. Here and there. Just haven’t had time to get out and make any vids. Kids have been with ex which sucks and a joke. Hopefully fixed soon. So haven’t had the motivation

    What would happen if you used all venison no pork?

      The sausage would tend to come out very dry. You need fat in sausage to help bind the meat as well. You could use less, just try a ratio that works for you based off your desired tastes!
