I haven't made this recipe yet, but based on the ingredient list, you could swap out the potatoes for radishes or jicama, and I know that many people use black soy beans in place of regular beans. For the tortillas you could sub with low carb tortillas, or use slices of chicken deli meat. There's also several keto recipes to make tortillas from scratch. I don't know if it'll be technically keto, but it'll definitely be significantly lower in carbs. Hope this helps! :)
