My father fell very ill with covid, it weakened his body so much. Less then a month from recovering he suffered a heart attack. Boy was it humbling experience for myself and my siblings. Our parents have always been strong and proud. They’ve always been our role models, it was frustrating feeling so impotent seeing they aren’t as invincible and we though. Our family is full of foodies, and it’s truly had a huge impact on us. Thank you guys so much for the recipe. I’m looking forward to seeing a little light in their eyes when I prepare this for them.

I do my vegetarian pozole almost exactly the same but my kids love it when i use Portobello Mushrooms cut em into big squares and Sautee them with the oregano and red chile sauce and juice. Hack from my abuelita, you can cut the dry chiles open with scissors 😁 Edit: finally made it with the textured soy and its AWESOME! I usually use beans since i dont wanna use soy curls cause theyre pricey. Found the textured soy at my local carnicería 😋 i hydrated my soy, took out excess water and tossed it in the airfryer to dry it out a bit. Worked perfectly

And of course everyone tells me that their abuelita makes the best. I bought some soya curls a couple weeks ago on a whim and they've just ended up in the cupbard because I didn't know what to do with them. I also bought some hominy ages ago from a special Mexican food shop (I'm in England, I get my Valentina in bulk and alays grab bonus stuff)- It's raining and cold today, so if I have the right chillies theres a 100% chance I'm making htis for dinner. If not I'll grab some next time I'm at the "posh" store (the only shop in town I know sell dried Mexican chillies) and I'll make it, 'm so excited!

omg it's easy - thank you so much! over the years I have made up my own vegan pozole recipes for my son (now 29, he stopped eating meat at 7 yrs old) so he would not be left out when we went to Tia's. Our family tradition uses a smoked ham hock in the broth - so with your recipe I will cook the soy meat with a couple drops of smoke seasoning and a little bit of vegan ham-bone base along with putting the vegan chicken base in the broth. I wouldn't have thought to use the mushroom based broth if I hadn't watched you, and I would have left out the soy meat because I didn't know how to prepare it correctly, I'm very grateful! Subscribed!
I'm very excited to try this recipe! IMO the tastiest vegan chorizo is made from chopping up Field Roast Chipotle sausages (would also save a lot of work). Warning, they are on the spicy side!
Have you heard of the better than bouillon not chicken bouillon? That’s what I use and I love it. It’s super flavorful and you can find it at most grocery stores and amazon! I am not vegan anymore but I’m def going to try this recipe. Thank you!

After a trip to Oaxaca a year ago I came back and started trying to cook a vegetarian version of pozole. I couldn't get it right - the broth just didn't have the depth that the pozoles in Mexico had. Watching this video, I think that the difference was that I wasn't frying the pepper paste in hot oil. That would definitely add depth to the peppers. I"ll try it again soon and see if that works out better. Thanks for posting this! You're videos are all so great!!

Awesome! 💗 I gotta try this for the hubby. I never tried it with soy. I love my pozole with chicken 😊 You should try soy tacos. You boil the soy with onion,salt and garlic. When done take out the onion and garlic then strain. Then cook some chorizo and add the soy into it and with some salt if needed. Then just put in on some heated corn torts and eat it with chopped up onions, cilantro and salsa verde😊👌🏻

Grapeseed oil is great. It's my go-to cooking oil and I highly recommend it for a healthier oil to cook with... and yes it is a neutral flavor oil.
