I have been on a bread baking journey since last New Years day. I decided not to buy store bread because of all the unnecessary additives to prolong shelf life. For the last few months I have been trying to make different flavors of bread. Sometimes I add sesame oil instead of butter and after I spray the pan I liberally sprinkle sesame seeds all over the inside and let the dough rise around the seeds and the bread gets coated with seeds. Toasted dehydrated onion makes a nice addition. Rehydrated the onions slightly and after yeast has proofed and added add onions and their liquid, real nice flavor. Of course almost any cheese, herbs and roasted garlic and peppers. The possibilities are endless. Be patient with flavored breads I find they may rise a little slower. Also great for sandwich rolls. Baking is a Joy, Happy Cooking ✌
I made this today. Had a few bumps in the road. Got a phone call during rise in pan and it over raised. So I just dumped it out and reshaped it and let it raise again. This second pan raise took no time and it formed the best shaped loaf of bread I ever made. Out of a mishap came something wonderful and picture perfect.
Great recipe! Tried it and loved it! I did make a couple of smaller changes, but foundation of this recipe made it work very well. The bread rose really well and was very soft and fluffy. I changed it to 50% whole wheat, so I added two tablespoons extra water too since whole wheat absorbs more liquid. The dough was soft but easily workable. I also doubled the sugar, which still didn't make it sweet but was the perfect amount for us. And the preferment I left out in room temperature for about 5 hours, then refrigerated overnight, and that too was just perfect. It added a lot of flavor but was not tart at all like some intentional sourdough breads can be. These changes would not have worked if the main recipe had not been good. And honestly, the fact that you use a pre-ferment / biga is what made me want to try your recipe in the first place, because with that, I knew you had more knowledge about bread baking than many others, and the odds were good that the recipe would be great with the added flavor. Thank you very much for sharing! Great video, too!

i am definitely going to try this bread recipe. I like a lighter wheat bread. The folks in my house will like the lighter textured bread, especially for French toast.

Through the years of making bread I found that some (Brand Names) whole wheat flours are ground much grainier then others. And find the dough to be not as smooth as white flour would be by it self. Actually I like the bread with the light whole wheat in it better then just white bread. A few months back you couldn't find yeast and some types of flour in the stores to save your life. Thanks for sharing this recipe, and the good tip with the over night starter yeast dough.

Hi Stephanie, I am planning to bake this bread, and out of my wrong judgment while buying flour I bought “Wholemeal Strong Bread Flour”. Should I replace the whole wheat flour with plain white flour (all purpose)to make it less tough?
I don’t like the texture and taste of a bread with just whole wheat flour. You could use this recipe and just use whole wheat flour for the white flour.
I tried this recipe today and it came out well. It tastes great. 😊 My bread didn't rise much during the both primary fermentation and secondary, proofing stage. I had to wait for more than 2.5 hours for the bread loaf to have decent rise. The loaf hardly touched the rim of my loaf pan. The size of loaf pan I used is 27.9 x 15.2 x 10.2 Centimeters. What could be the possible reasons? Thanks!
I used a 21.5 x 11.5 x 10 cm loaf pan. Since you used a larger pan the loaf wouldn’t be as tall. If your dough didn’t rise maybe it was the yeast or if your room temperature is cool it can take a lot longer to rise.

I've made this 3 times, and every time it's been great. I put in about 1/4 c. rye flour, for flavor, otherwise just as the recipe states.

It’s best to use a sharp serrated knife in a sawing motion once the bread has cooled,
Let the bread cool 100% at room temperature
Don't try to cool it early in any way
It'll cut better 4-5 hours later

Yes you can but changes need to be made. I haven’t tested a 100% recipe so I couldn’t comment further until I do in the future.
