The trick with tyis cut of meat is that you treat it like pork, but you cook it to factor in additional fat by 1/2 because these have less fat to render than does the more expensive porkchop. Ghee and Butter are good staple options.
You are such a great cook. Thanks for the tip on how to dissolve the flour in the liquid at the beginning. The liquid I use is nothing but chicken broth instead of water it makes it so much richer. My sister-in-law even made it better. She poured in a jar of Italian dressing in the gravy as it simmered.
