    I had a rooster... that was supposed to be a hen. Today I decided to take him to freezer camp. I found your video and it helped a ton. One rooster... in the fridge to cook this weekend.

    Thankvyou for your video. We are getting ready to harvest 23 meat birds in about 2 weeks. This will be our first time so watching tons of videos and taking notes. i really liked yours because it was straight forward and concise. I have noticed little tweeks here and there with different folks but pretty close enough to each other to know this must be the best way! Congrats on you harvest and have a great Winter of wonderdul food raised by yourselves!

    I really love this video. I don’t own chickens and I have 0 experience with them, but I want to eventually have some for both egg and meat purposes. Im researching into different subjects surrounding chickens and other aspects of farming (and the similar) and hope to be able to proudly have some of my own food that I grew/raise/butchered/etc. myself someday!
    Im very young, and find it hard to understand a-lot of what people are saying or explaining, but your video is by-far the most understandable and articulated. And I know everyone says this, but theres no crazy music or ruckus in the background which makes this video even clearer. Thank you again!

      The brand is Victorinox (I think that’s the correct spelling). We’ve had really good luck with them provided you have a decent sharpener 👍

      It went well. I've still got some learning to do, but I think when I do actual meat chickens, it will be much easier than laying chicken roosters that aren't as meaty as one would think.

    Couple things I've noticed:
    1) The chickens look actually quite small for 9 weeks. Were you feeding enough? I use the chart by Welp Hatchery to measure their feed daily.
    2) Scalding for a minute or minute and a half is way too long. 30 seconds should be more than enough time. I do 150 degrees F for 15-30 seconds until the feather comes out as easily as you showed it. I don't think you need to leave them in the scalding tank any longer after that point. I'd be surprised if you didn't cook the skin/meat slightly.
    Otherwise great stuff and I thank you for sharing!

      Thanks for the info! In response to your suggestions:
      1) We got our birds later than we wanted because that was the availability at the time we ordered. It was a sweltering summer which contributed to their lack of weight gain as well as their feather production. This past year we ordered sooner, received sooner, fed similar amounts, and the results were night and day - we had some over the 5lb. mark when processed!
      2) The scalder we were using wasn’t exactly the cream of the crop and our experience using it was even less so. 😂 There were a couple from this batch that the skin tore while plucking because of a higher temperature (we kept this back for ourselves). Once we got it adjusted, we were on a roll. Again, year 2 was much better! A little dawn dish detergent to break the surface tension, a brief scald, and a steady stream of water while plucking made all the difference!
      This year we didn’t pot to RUclips, but we did update our story on Instagram which had been saved under Meat Chickens if you want to check out the slight tweaks there too. We hope to learn each year and share that accumulated knowledge with others. Thanks for being a part of that! 😊

      We picked ours up from our local Cooperative Extension office. They “rent” it out for free along with the scalder and cones. We’ve done this every year and they’re always so happy to help!

    I have 30 birds I’ll be ready to harvest soon and was curious if I could use the same tube for shrink wrapping all 30 chickens or do I need 30 12 inch tubes?

      The tube is sanitized before we start and, unless there’s a reason to resanitize in between, we keep it working.

    How do you prevent chickens from exhibiting rigor mortis?

      Rigor mortis doesn’t set in until the chicken has been dispatched and is left to sit for quite some time. We process 3-4 birds at a time from start to finish and get them in an ice bath to cool down for proper storage. No time for it to occur. Hope that helps!

    Was your meat tough from freezing them after buttering... I thought you had to let the birds rest for 2da3 days ...

      Nope, we just let them rest in the ice bath for a few hours then straight to bagging and freezing them. They had the same texture as a chicken you would get from the grocery store, not tough at all :)

      It all goes into a collection bucket/bin and we have used it for compost, used it as fertilizer after diluting, and so much more!

    The feet and keeper organs- my family will not eat. How do you process organs for dogs? What are feet good for?

      We cook up the organs kind of “stir-fry” style and feed to to the dogs as treats. We also dehydrate the chicken feet (after removing the nails) and those are excellent treats as well!

      Basic anatomy is the roughly the same, but you’ve got to be careful with certain things I’m sure. I know it’s similar for chickens, ducks, and turkeys.

      We ice ours to bring down the temperature so it doesn’t thaw out our deep freezer. The short answer to your questions is: We’ve never intentionally left them to find out!

      We put them in an ice bath directly after processing and leave them just long enough for the core temperature to come enough that it won’t defrost the freezer. I think last time, we probably left them about 4 hours, give or take

      No. It’s not recommended because the rigor mortis. It makes the chicken super tough. Wait 24 hours before cooking at least

      That’s the way it was done for years and years - kill, pluck, and put it in the pot. We’ve never done it that way so I can’t speak from experience

      If you eat a bird a week, that’s 48 weeks or almost a whole year! We eat a lot of chicken around the farm so maybe half that 🤔
      It also depends on the size of the bird, sharing with family and friends, and a few other factors.

      You certainly can! We don’t chop the necks off to make sure there’s no bone shards in our chicken. We also roast a lot of chicken and the extra bone/skin/fat is more flavor!!!

    I would suggest not adding video advertisements mid how-to butcher. Let's just assume I'm holding a knife and actively doing what you're teaching. Now that I stopped, washed my hands, I'm going to find a how to video not interrupted by advertisements.

      I’m pretty sure he’s not in control of when or where ads are inserted! They’re not that long just let them play & proceed! You should have watched ahead of time and then you would have known what was next! 🤦‍♀️

      Unfortunately we have no control of where ads are placed on our video. The trick (for the future) is to watch it all the way through and then on the replay it won’t give you ads.

      We always wait until the birds have sat a while in the ice bath just to make sure the freezer doesn’t defrost. I’ve seen folks say 24 hours in the ice though we personally haven’t waited that long.
