How to Make Braised Pork Belly /红烧肉

  • This is my recipe for braised pork belly, a very popular dish in Chinese cuisine. Although it may take a little while to make, the taste is excellent and worth the time. The sweet and savory flavor of the sauce and tender texture of the meat make this a delicious meal. You will enjoy it!
    Ingredients
    1 1/2 lb pork belly
    1 cup water
    2 tbsp dark soy sauce
    1 tbsp cooking wine
    2 tbsp sugar
    1 tbsp rock sugar
    5 cloves peeled garlic
    5 slices of ginger
    2 star anise
    little bit cooking oil, salt

    This is a great video. I've eaten this dish dozens of times in China and this recipe is CORRECT. I've written down the cooking process to make it easier for others
    Ingredients (Listed above)
    The Cooking Process:
    Cut pork belly in 1/2 and simmer for 5 minutes - allow to cool
    cut into square pieces
    cook oil and sugar until sugar begins to caramelize - fry pork pieces in this for five minutes
    Add wine and soy sauce and reduce a bit and then add the 1 cup water, star anise & salt.
    Bring to rapid boil. Add garlic, ginger and green onion.
    Cover and simmer for 50 minutes.
    Add rock sugar and reduce sauce over high heat
    Serve (typical presentation would be in small individual clay pots)

    I found this recipe over 4 years ago, and this has been my go to dish whenever I buy pork belly from Costco (purchased monthly)a lot of my friends and family are not a huge fan of pork, but after making this dish they changed their minds and constantly request this recipe and I would always share this video with them❤️

    nice simple recipe. I used to cook braised pork belly many times exactly this way. Only couple suggestions, if you use soya sauce there is no need to add extra salt. Besides, brown sugar is better that white, less sweet and nicely braise pork. Instead of cooking wine I used dry sherry or .... cider. I know, sounds crazy but it cheaper and imo taste better. I cooked for my Chinese friends and never believed that was cider. Actually, I hate drink cider but for cooking is really good. In this case is good to add a pinch of Chinese five spices. If someone likes a bit spicy, I recommend add also two/three grains of Sichuan Pepper.

      I agree, soya sauce is full of salt already, no need to add more salt. I also prefer table wine over "cooking wine", lower alcohol level and much more flavorful. A $9-$10 bottle will do just fine. I will try cider next time.

    I made it yesterday, so easy and delicious ! after one hour I put the meat in the oven in for 30 minutes the meat was so tender . thanks for sharing!

      I haven't used this exact recipe yet, but it looks really good, like a solid standard but not excessively complicated, nor oversimplified. I like to make pork shoulder, Boston butt, cut into the same shape with this braised pork belly technique. I'm going to try this recipe on that. I have a feeling this will become my future reference for how to do it.

    using burnt sugar is a very common way of starting stews in Caribbean cuisine. i didn't realize any other food culture used that approach to add a rich brown color to their meat. there is a piece of pork belly in my fridge that is so begging to be made in this manner, though i may pass on the rock sugar at the end and toss in a bit of cornstarch instead to thicken up the sauce. thanks for sharing the video.

    man this was so good. i did mine with smoked pork rib meat. I cut down the cooking time a little, I think that'd get the meat a little rough! added some pepper flakes for heat. salty, sweet, tangy, spicy, yummy!

      Hi Kyle. Cooking meat longer actually makes the meat fall apart. This is especially so for those 'cheaper' cuts like shin, shanks, brisket etc.

    This recipe is delicious. I tried it today for dinner. However, the pork is still quite hard for my liking. Did I do something wrong or overcooked? thank you. will be making it again for sure .

      I'd recommend that you cook it a few minutes longer, as she has shown in the video at the beginning or at the end. Usually when meat it still tough or hard, it just needs a little more time on the stove.

      I checked with my friends and they say it should cook for four hours if its not in a pressure cooker. Inside the pressure cooker is 30-40 minutes.

      +The HeartBrokenBiker pretty sure the sugar later on is just for the shine and you can easily leave out the star anise I'd say. Did you do it though and if yes how'd it turn out

    don't use regular white sugar if you don't have rock surge just do without it, adding white surge will make the pork too sweet, the reason they used rock surge is to give the shine on the meat, rock surge not as sweet as regular surge.

      Shaoxing cooking wine actually tastes the same like dry sherry. If you can find sherry you can use that as well.

      The first water boil is usually to clean the scum out of the meat. That water is thrown out.
