Vietnamese cuisine never uses soy sauce unless you are 1. eating Chinese food 2. dipping bread in egg yolk or 3. you are vegetarian and cannot use fish sauce
Not only for Vietnamese but many Asian countries. Laos, Thai, Cambodia, etc do not use soy sauce, only pussies...errr China, Korea and Japan love them. We like our fish sauce :D
FYI don't call all the waiters/waitresses Em Oi . Depending on their age you have to call them either Chi Oi ( my older sister) Co Oi ( my aunt or miss ) , Ba Oi ( madam) , Em Oi ( young sister or young brother , only when she or he is a little bit younger than you) , Chau Oi ( my niece or my nephew , when she or he is a lot younger than you ) , Anh Oi ( my older brother ), Chu Oi ( my uncle , when he is or looks younger than your father ) , Câu Oi ( my uncle , when he is or looks younger than your mother ) or Bac Oi ( my uncle or my aunt , when she /he is or looks older than your parents ) . Never ever call an old waiter /waitress Em Oi , It would be very impolite and disrespectful , because they could have the same age as your parents or even older and that would make them very upset . Vietnamese is so difficult and complicated that not many foreigners can really master that language .
I want to find the correct mix for that dipping sauce with the pineapple. I have all the ingredients, but I guess I'll just have to play with the proportions. I would do it with pla rha rather than simple fish sauce, but that's just me.
Great that you love Vietnamese food. For that Mam Nem, make sure to put ground chili pepper into it. It will enhance the flavor of the sauce even more.
Van is world famous. Congrats Gary for learning Vietnamese. Winner hands down for me was the grilled meats soup. Just maybe you will think about another 1 with Van Vu again. Such a delicious and yummy video. Outstanding Job.
