- Today was my last day in Saigon and that means my Vietnam trip has come to an end! I Couldn't leave without one last pho and I think we may have just saved the best till last!
I headed to a 38 year old (altogether) Pho shop called Phở Chao, a Michelin recommended pho restaurant in the Binh Tanh area of Saigon.
The owner, Mama Chao, is one of the nicest, warmest and most welcoming people I've ever met and her three day broth is worth the flight from Thailand alone!

Dipping a Banh Mi roll into 'Photine' is genius
The Vietnamese Poutine is right up our Canadian heritage alley! Saved this place for when we get there! When I was in Thailand in 2006 I taught the kitchen at the resort I was staying at on koh pha ngan how to make poutine 😂

Strange way to make Poutine and with cheese?, I make my own version watching my dad cooked this dish for many years. Just good beef, garlic, onions, tomatoes, oyster and fish sauce and of course french fries. Bo Kho looked good 😋

Never tried culantro. I'm assuming it's a stronger version of cilantro?
All very special. Could be just my taste, but I'd go for the fresh tenderloin in all those dishes, maybe because I'm tired of brisket (but that extra fat in the pho would be a plus). The photine was one of those dishes you might expect to be hyped but not that great, but I would probably just go there for that (and I still drink my eight a day of light beer so that should work well). Now I have some ideas for making my pho bowls here at home, and I have all the ingredients for that photine except for the special homemade chili sauce, but I can make my own version.
Hope when i come back to Vietnam we can make a "we found the perfect bun thit nuong"

Oh how i miss pho.
Serving the soup in shallow medal spoon probably tone down the enjoyment of the broth. A deeper porcelain one might work better.

Chips n' gravy with fish and chips and Scouse?
I’ve been to this shop, I’m gonna be honest I wasn’t crazy impressed. I REALLY liked their hot sauce but it didn’t taste like true northern phở for me, YA BETTER BE BACK SOON!

She cut the meat with one hand in a glove and one bare hand . For me it didn't make sense . It was semi-hygienic . The second bowl of Pho ( if one can call it Pho ) didn't look very appetizing for me .

South Pho is more flavor than North Pho(sweeter)!
i prefer pho south than pho north , pho south has a lot vegetable and bean sprout , soy sauce , chilli sauce , but the north only green onion

Foo or Faa? That kitchen was a little scary, playing food poison roulette with non refrigerated meats.
I am sure those beef are safer and fresher than any refrigerated meat
They don't have to fridge the meat because they'll cook it fast due to so many customers...

saigon beef pho is the worst in the world. i must tried 20 resturants in HCMC, never found a beef pho that is chewable. vietnamese must have the teeth of tiger.
