I knew it!!! Raisins for me, too! We use leftover white rice and skip the rice cooking step. I add a small pat of salted butter (about 1 Tbsp) to a large saucepan and then add the cooked rice…we use about a 1/2 to 1 cup of half and half to begin softening and reheating the rice (only takes a few minutes) and then we add in raisins, cinnamon, honey, vanilla and a pinch of nutmeg! It’s amazing and very similar to your recipe just using leftovers😉
Growing up, my mom would always add cinnamon and raisins just like this. I had friends that would add vanilla, cocoa powder and cinnamon, sometimes a dash of chipotle for a kick. Great recipe, thank you.

Try soaking the rice for 4 hours before adding to the boiling milk, and start this pudding dish by adding few tablespoons of ghee(clarified butter) ,2 whole cinnamon sticks, 2 cloves and few pods of cardamom,then after sauting these spices for few seconds, added milk and continue the process at you have mentioned.. it tastes even more delicious..

My Mother-in-law always makes it with cherries. She takes a jar of cherries (glass), heats it up, and adds a bit of cornstarch to thicken the liquid. This gets then poured over each serving of rice pudding. Delicious!
We do a Danish version of this with chopped blanched almonds, like a quarter cup, which retains its crunchiness along with the creamy chewiness of the rice pudding. Then you chill the rice pudding, and stir in a cup or so of whipped cream before serving, or chantilly cream if you want to add some sugar and vanilla to that. So it’s kind of light and fluffy in a way. They add currents, but my family doesn’t like currents so we skip that part. And for Christmas, the tradition is to add a whole blanched almond to the bowl of rice pudding. Everybody eats carefully to see who wins the almond, and whoever gets the almond wins the “almond gift”, which is traditionally a marzipan pig, but it can be anything. So that’s a fun game with the kids and it slows everybody down from gobbling up the rice pudding too quickly. :) (by tradition, you also leave a little bowl of rice pudding by the fireplace for the Nisse (elves), so they leave you a nice gift or maybe so they don’t cause mischief like hiding your gifts!) We also might serve this with a sauce of brandied cherries. My mom just took a can of cherries, not the pie cherries but the other ones, heat that in a sauce pan with a little bit of cornstarch and brandy to make a sauce. 🇩🇰
I add cardamom powder and a few cloves. Finally roast some cashew nuts and dried raisins in ghee and when the raisin puffs up, add them to the pudding including the ghee. With this you will achieve nirvana.

I add nutmeg not cinnamon, no raisins. Eaten warm not cold. But a tasty extra is warming sliced bananas in brown sugar until syrupy and spooning that over the prepared pudding. Love your ease of prep as a base recipe.
Dried fruit is fine - but a good teaspoon of jam if better and in parts of the world more usual (ideally raspberry, strawberry jam fine) . And also nutmeg instead of or as well as cinnamon.
Oh, could you tell about the difference? (sorry for my english, it's not my native language). In my country we call this meal 'risovaya kasha' 😊. And pudding is dessert meal, like catalana cream or flan.
I’ve tried this when I was studying in the UK. But it took me an hour to cook, and the rice still remained hard to bite. Hahaha didn’t know what’s wrong with the process.

Its called Kheer... with some extra berries... 1st of all, also add some cardamom powder to it... it will smell and taste yum... and 2nd, if you are making a recipe which is inspired by some other recipe... please let everyone know or atleast mention it... west only knows naan, biryani, butter chicken, chicken tikka, and mango lassi as Indian cuisine... apart from that no one knows what Indian cuisine is... atleast this way people will know about some more Indian recipes... its an Indian dessert... if you just give a westernized name, no one will ever know anything more than those 5-7 Indian recipes...
I'm curious about how you store your rice. If my eyes don't deceive me it looks like the shown package expired in 2021. I'm guilty of finding expired rice packages at the back of my pantry and tossing them out because I don't think they're safe to eat anymore :(
