Wow, I haven't watched this for a few years! I remember watching it a dozen times before I took my tandem rating course and thinking, god, there's a lot of stuff could go wrong!! All the malfunction variations too. Thankfully in 1500 tandems i never had a mal. (some passenger vomit yes!) When we started using Vectors it seemed easier.

For a number of reasons! Most importantly for the opening shock of the parachute, if the student has its head down it can rock back and hit the instructor in the face hurting both and the neck of the student.
It is to try to get the passenger to arch right out of the plane. If the passenger looks down they tend to de-arch at the hips. The HARD ARCH is the default to skydiving it creates stability. Like a badminton birdie the rubber is your hips and the feathers are your legs, head and arms. Also the tandem master needs to get a drogue out ASAP! to also create stability and slow down to the rate of one person not two. Another reason to have the head back and arms on the harness is so it doesn`t interfere with the drogue toss.
I have 150 dives not that it matters... but the head is placed back before the jump because people have a tendency of their head snapping back when the air hits them... so it's basically to keep their head from breaking the instructors nose or knocking them unconscious you should get what I mean by now
