    A freezer ziplock bag (1 gallon) with a hand towel inside works great in lieu of a bamboo mat.

      ***** Hey Tom, I went by an Asian market yesterday and picked up all the ingredients and am ready to try and make sushi now for my parents. You mentioned questions - I have two. First, I went ahead and created the Mayo Spicy Sauce (I eyeballed the amounts based on your video but all ingredients were the real thing). So how should this be used? Should it be incorporated into the sushi when making it or used as a dipping sauce? (sorry if you already covered this). Second, could you tell me the basic proportions of the sushi vinegar solution you mix into the rice when hot? Thanks a ton for the help. I really appreciate it.

    just out of curiosity, why do you use the mat on some rolls and on some you roll by hand and form it with the mat after?

      +Matthew Cushing Probably because he's a pro at it and has the right "feel" for it when it's under his hands. I think the mat is to show us newbies the proper way to do it. kinda like a failsafe.

    So I went and had a go at making some sushi again today after seeing your videos on making sushi. It's very hard to work out how much rice to make in advance, but I managed to make four small rolls and a big california roll from two cups rice. Will need more practice to stop overfilling the rolls though!

    Delicious!. I loved listening to his cute instructions it felt like therapy. I love eating sushi from professional's hands but I would really love to learn to do them at home. Its so much cheaper as a little goes a long way with the ingredients. You can add whatever you like in it. I enjoyed this simple to follow instructions. :)

    Made my first batch of sushi rolls using your methods! It went really good! I made mostly inside out rolls, but when I tried doing some of the regular rolls (nori on the outside) they were too short to close! Is that becuase I used too much filling or too much rice? not long enough seaweed? (I halved the sheets) Thanks!

    Responsible sushi establishments source their Tuna,Salmon, etc from wholesalers who use certified,parasite free feed for their farm raised fish,or freeze all fish to like 0 degrees or less for a determined period of time to kill all parasites,etc. Anyone watching this video thinking they can just buy a hunk of salmon or tuna from their supermarket is risking contracting tapeworms the size of an Anaconda or worse. Great recipes and channel. I highly recommend reading Trevor Corson's THE ZEN OF SUSHI for more on this. All the best,phil
