Yes you can refrigerate. The ganache will set but you can increase the amount of cream when making it so it's not as solid. If you leave it as is, it's still delicious because it takes on a truffle texture/consistency.
I noticed you are in Australia. I'm in USA. What are the chocolate ripple biscuits? Are they like chocolate wafer cookies? (Like thin chocolate cookies)

When you put he whipping cream inside the creamy sugar and cream cheese do you whip to stiff peaks or just mix until it’s combined
H.A Al not quite to stiff peaks. Just before that. If you take it any further the mix may split.

You and add more cream and re-heat very gently so it doesn’t burn or separate.
Should you use extra thick double cream or double cream
You can use any cream that whips to stiff peaks.

Fabulous! For a softer Ganache, add more cream....try 50% more.

What sugar you use can you use icing sugar
I use Caster Sugar or Super fine Sugar. You can use Icing Sugar if you like.
My filling wasnt that thick and so thats why it didnt keep intact everything combined with each other is it a problem?😭 still would taste good?

Is whipping cream same as double cream? And for the cream cheese can the Philadelphia cream cheese be used?
As long as the cream can be whipped to stiff peaks it will work well and Philadelphia work well too :-)
