Sam!!! My family and I just finished eating this. Almost true to your recipe, but I grilled the chicken rather than smoking it, and I used penne pasta. The salsa - amazing and easy, we will be making that just to have with chips. The chicken with the little bit of soy - OMG! I almost didn't put the red peppers red peppers in, but those made a beautiful contrast in color, flavor, and texture. Everything came together to be one of the best of your dishes we have made (and we have made several). And, I learned a few new techniques. Thank you for bringing us this! Recipe below: Since the good folks here don't do recipes I'm helping Make America Cook Again by keying it in.... Spicy Chicken Pasta from STCG Chicken breast, dash of oil, in a zip lock bag, tap out to an even thickness Rub - 1 part ea: Cumin, Garlic powder, Chipotle chili powder, salt, pepper, Mix 1 Tbsp ea oil and soy sauce, (and a dash of liquid smoke), brush chicken breasts. Apply rub. Flip, and repeat. Drop em on the grill or smoker to 155 and carry over to 160. When ready to assemble, cut against the grain. Salsa: Husk 8 plum size tomatillos and rinse, two whole jalapeno, a white onion quartered, 5 skin on garlic. Lay on a foil lined pan in the broiler for 3-4 mins per side til nicely blackened. Add to a blender (minus garlic paper and pepper caps). And we mix. Add a head of cilantro and a pinch of salt. Mix again. Cheese sauce: 1-2 C White American cheese (because yellow is creepy). Simmer 3/4 C water. Add cheese. Tsp of cumin. Add a few big Tbsp of salsa to the cheese sauce Add milk to thicken if necessary. Water to thin. Dice red pepper and sear hard on a hot pan with oil. Set aside. Cook pasta, add some Salsa Cheese sauce and red peppers. Plate the pasta, top with chicken, garnish with cilantro, pepper, and parmesan. Add a poached egg for extra
