All three of those meals look great! I love chorizo scrambled into eggs and sweet onions! . This week I meal prepped a breakfast burrito for each day that had scrambled eggs, refried black beans, some queso and a little crispy fried potato in it and then wrapped them tight in a flour tortilla, and I wrap them in a paper towel and put it in a Ziploc and pull one out put it in the microwave for one minute then put it on the Comal with just a tiny bit of avocado oil and crisp up all the way around boom done breakfast. I had eye surgery last week so meal prep like crazy so all I had to do was heat and eat everything all your recipes thanks Steph and Claudia.
I can’t ever find that good chorizo here in NYC! That’s what I miss of living in California. The chorizo here is hard almost like Salami or Italian sausage!

Very rare that a non-Hispanic likes chorizo. Seems the flavor is too intense? Anyway what I have been told while cooking for a multi-ethnic group of people. I LOVE chorizo but i'm 1/8th Hispanic and grew up with it. I've found that using ground beef or pork and adding a small tube of chorizo never gets a complaint due to palates or the idea of eating a sweet meat.
I am very conscientious in food pairing with chorizo. Beef with ground beef, pork with ground pork due to some friends that have religious dietary restrictions in avoiding pork.
