Also, PANCAKE DAY! It started when Pope St. Gregory prohibited Christians from eating all forms of meat and animal products during Lent around A.D. 600. He told St. Augustine of Canterbury, a founder of the Christian church in southern England, to enforce those same fasting rules in England. So Christians made pancakes to use up their supply of eggs, milk and butter in preparation for Lent. When the tradition spread throughout Europe, people in France followed the trend. They made waffles, crepes and a dessert many know as king cake to utilize their dairy products. They called it Mardi Gras. And the English named it Pancake Day.

I loved eating pancakes and was raised on them for breakfast when biscuits was not served in my grandmother's kitchen. I still love them, but don't eat as many as I use to then. Ma had a big long cast iron pan that she made pancakes in for 8 kids. We all picked wild black raspberries that she made into syrup and i'm telling you it was wonderful. That was like 60 years ago and i remember like it was yesterday.!!!!!!!!!!!!!!!!!!

Yumm this looks delicious! I find when I make pancakes, I have a hard time knowing when to flip the pancake. Either I flip it too soon and it's not fully done or I wait to long and it ends up burning! Should it be on medium heat? Or low?
Hi Sarah: Keep the heat on a medium heat and you can move it around in the pan because sometimes one side of the pan is hotter then the other side. But 2 to 3 minutes cooking on each side they will be cooked and so tasty, lower the heat if the medium is to hot. Enjoy Bonita

My Dad would make us pancakes on the weekend.This was 50 years ago. Dad had a HUGE griddle, the size of an aircraft carrier. He would cook up immense quantities of bacon, and save the fat. He then mixed up IMMENSE quantities of pancake mix, as my brother and I had hollow legs. He would spread some spitting bacon fat all over the griddle, and start spooning up the pancake batter. My bro and I would dance around in anticipation. Dad would pile up the pancakes on our plates wit lots of butter and maple syrup, and corn syrup. We would fall upon our plates like starved wolves. The bacon was the benediction. Mom got breakfast in bed of course. Over time, we had to give this up. Dad got stomach ulcers and heart problems. So no more bacon fat fiestas. We eventually gave up the griddle. Now, I make pancakes from a premix, using vegetable oil instead of bacon fat, and honey instead of maple or corn syrup. Sometimes I make some bacon before hand, and use a splash of bacon fat in the pan. Oh, I remember.
