My mother and grandmother both made this cake often. They split the batter between loaf pans. Always had raisins in it and sometimes some walnuts and a butter cream frosting on the top. Thanks for the reminder of how good this is.

In 1955, my mom made this cake sans the raisins and cherries. She wasn't sure the tomato
soup was a good idea but she tried it anyway. It was great. I believe she added cocoa powder
in lieu of the fruits. I do think butter was added. But she topped it with a red icing! Happy
    Valentine's Day.

Wow Bonita- that looks good. I'd never heard of a tomato soup cake either BUT I'm gonna make one when I a can of the soup. And as I've heard others mentioning, tomato"s are a fruit so... I get it. I like to add coffee to a couple of things I make because it gives ya a more rounded flavor. You know, something besides sweet. It makes your sweet taste more interesting.I'll bet that"s what the soup is doing here. Anyhow, thanx for sharing that recipe.

Love your show. So relaxing and down to earth. You use mostly things you have in your pantry. Good, hearty recipes that are tested and loved. Thanks. I only wish that you would do more. I am a retired social worker who loves to cook. I'm looking at new ideas from different parts of the world for inspiration and satisfaction. My Nanny's family was from Nova Scotia and my husband's best friend is from Bell Island. My husband is from Trinidad (an island in the Caribbean) and funnily enough has much in common with his friend from Nfld. He loves salt cod, meat pies and jigs dinner. Anyway, thanks for your inviting style and intimate knowledge of Nfld food. Your videos are and will continue to be, I hope, a part of posterity. Cheers.

@@bonitaskitchen Hi9 Bonita, I made the cake this afternoon (I will never hand mix a cake again) and it turned out very well! As I threatened, I did add the Craisins and the roasted pecans along with some left over mixed candied fruit and it's an incredibly moist and flavorful cake. What was interesting was how the aroma changed during its baking time - at first there was definitely a tomato scent but it gradually changed to more of a caramelized one as I'm guessing the tomato flavor changed through the process. Either way, turned out great however, I don't tell people what's in there and then surprise the crap out of them with the big reveal. One person asked me if I'd soaked the dried fruit in Screech :)

This is so unusual I'm going to have to try it! If anyone asks out here in California I'm going to tell them a nice lady from Newfoundland Canada gave me the recipe. 😉 Hey, we raise most of those tomatoes used in sauce and soup - might as well put them to use in a different way! Seems to be that recipe just calls out for some chopped walnuts. I guess it wouldn't hurt to add them (I use walnuts in lots of baked goods).

This was my favorite cake when growing up (I am in my 80s now) and I have made it often for my kids, friends, and self. My recipe is a bit different for ingredients, though the process is the same.
    Ingredients:
    2 c Sifted Flour
    2 t Baking powder
    1 t Cinnamon
    1 t Nutmeg
    1/2 t Cloves
    1/2 t Baking Soda
    1/2 c Butter
    1 c Sugar
    1 x Can tomato soup
    4 oz Apple Sauce*
    1 c chopped nuts
    1 c Raisins
    * When the original recipe was printed, tomato soup came in 14-ounce cans in the U.S., but over the decades these have shrunk to less than 11 ounces; apple sauce blends right in and comes in convenient 4-ounce containers.
The next time I make it, I'll use your brown sugar and cherries, the latter probably taking the place of some of the raisins. Incidentally, my mom taught me to always measure brown sugar packed; have moms a different view north of our border?

      @bonitaskitchen  4 года назад +2

Oh my that is so wonderful and thank you for sharing your beautiful recipe with us and story, I will have to try the nuts in mine the next time because I love them. The apple sauce sounds lovely as well, I always measured the brown sugar loss but packing it down is good to. :) Enjoy Bonita

@@bonitaskitchen If you like, I can send the entire recipe; the original is from the Culinary Arts Institute cookbook in the 30s (originally published in booklet form that my mom had and later in a single volume of 1948 that my late wife had, but changes have been made). When you pack down brown, you get more, and I never stint on sweet.

      1/2 c Butter 1 c Sugar

Sift flour, soda, baking powder and spices together three times while
the shortening (generally butter) and sugar cream together until
fluffy. Add tomato soup and apple sauce, then dry ingredients to
sugar/shortening, mixing thoroughly with each addition. Stir in nuts
and raisins and pour (or shovel) into small greased tube pan to bake
in a moderate oven (350 degrees) for 50 to 60 minutes. Leave in pan
for 10-15 minutes before turning out on a cooling rack. Best if left
to stand 24 hours before frosting. Frost with (not ignoring the
central hole) Don's Cream Cheese Frosting.
FROM: Ruth Berolzheimer, Culinary Arts Institute
Encyclopedic Cookbook, Culinary Arts Institute, Chicago,
1948. (This is the big collected book; my mother made this
cake from the same recipe in a magazine sized section,
published and sold separately by the CAI, well before
1948. One guesses the recipe dates to the early thirties,
      easily.
DLM COMMENT: A childhood favorite of mine, and I remember
my mother saying with approval that it was one good cake
that needed no eggs, as if this small economy overcame the
expense of the very substantial groceries the thing
otherwise contains and is covered with. The covering,
incidentally, I developed in the eighties, though others
before and since have probably developed it, too. I just
didn't see their recipies before forging ahead. Regarding
the nuts, either walnuts or pecans are good, hazelnuts
(but who can find them) would be splendid.
      Don's Cream Cheese Frosting
4 oz Cream Cheese 3 tb Butter or margarine
      2 c Powdered Sugar 1/4 t Vanilla
      1 x Healthy squeeze 1 pinch salt
      lemon juice
Cream butter, salt and cream cheese, mix in sugar, add
vanilla, squeeze in lemon juice (from a genuine fruit,
naturally) to taste and consistency. Apply with generous
spatula. Makes more than the cake requires, but the
leftovers are up to many uses.
      ___________
      * I discovered in 2010 that Campbell's had changed the size of their
soup cans from 14 oz to 10 oz at some time in the past, throwing
this recipe in error. This version corrects that error, yielding
a cake of the right moistness.

Your recipe looks wonderful. I was raised with my grandmothers prairie tomato soup cake, similar but a smaller version, usually fits an 8x8 or 9x13 pan, depending on how thick you want it. It was made with shortening, and next time I'm going to sub in butter, as that sounds delicious. Also ours made with raisins and walnuts (which I now sub with pecans due to allergies), and included cinnamon and a dash of nutmeg, so a bit more of a spice cake type. We often serve it with a dusting of icing sugar on top, or for fancier, did a maple or cream cheese frosting. Never thought to combine the two, that will be my next try too. Thank you so much.

My grandmother used to make this cake and I’ve made it many times. My version doesn’t use butter. I think it was a depression or WWII recipe with the lack of eggs and butter; and it’s suitable to ship to someone who’s far from home. The soup does not make it taste like tomatoes - it’s like using applesauce. It keeps the cake moist. I like to add nuts to the cake.

I wanted to tell you, the Tomato Soup Cake was a huge hit with both of the groups that I made it for; the leftovers went to my church where they enjoyed it too! I made it twice as a flat cake in an extra deep 9x13 pan that came with plastic lids for purposes of transport which helped very well.
For each I put in 1 cup of golden raisons, 1 cup of dried cranberries, and 1 cup of dried cherries. The sweet but tart flavors blended very well with the slight tartness of the tomato soup.
I used vanilla flavoring instead of maple syrup for the cream cheese frosting and everyone swore that was the best part of the cake. I think the vanilla makes the frosting taste even sweeter, though I am considering using orange or lemon flavoring next time. I love cinnamon better so I added 1 teaspoon of that rather than allspice to the frosting.
That nifty flour trick with the dried fruit keeps the dried fruits from clumping up together. I find I still have to break up the clumps once they are outside of the packages since they seem to get smooshed together what with packaging and shipping.
I also added 2 extra tablespoons of brown sugar and 3 individual packages of white stevia powder to the cake batter. That made the bite of tomato much less noticeable. I thought the flavor was a bit better balanced with that extra sweetness.
For the spices in the cake batter, I added 1/2 ground teaspoon cloves and 1 teaspoon of ground cinnamon as well as 1 teaspoon of allspice.
I thought it turned out really delicious!

I was only to Newfoundland once as an adult and stayed with some lovely people. He cooked the whole time and like you wanted to share as many traditional recipes as he could with us. So I’ve had cod cheeks and tongues, fish and brewis, jigs dinner, bake apple tarts....yum! Great memories and wonderful people. I’ll be trying out a lot of your recipes for sure! Thank you so much for all you do. 🙏❤️

My guess is that this recipe was created many decades ago when fresh eggs were not available. I have also heard from elderly women that they made cakes with mayonnaise during WWII because they did not have eggs.

Yes it was Peggy! This recipe is many years old and it was one of these cakes that took not a lot of ingredients because of shortage on groceries and money. I'm glad you enjoyed our recipe....:) Bonita

Hi Bonita this looks really really good. I'm not much of a baker so this may sound like a stupid question why are the raisins and cherries coated with flour? Just curious. Thank you for another great video and thank you in advance of my question

You are very welcome and there is never a stupid question only good ones. The reason I coat the raisin but mostly the cherries in flour it helps prevent them from falling to the bottom of the cake when baked. They will be equally through the cake and not all on the bottom. Thank you so much for stopping by and for your lovely question, this is a lovely cake and easy to make you will do amazing. Enjoy and stay safe. :) Bonita

I'm going to try this! But question...you stated 2 tsp baking powder but the recipe reads 3 tsp. Is it 2 or 3?

My favourite cake that I make is a tomato soup fruit cake. My recipe has no eggs and 125 grams of butter and the tin of tomato soup.
