Here's a tip! When you want to flavour your oil with garlic, ginger or other aromatics, add the aromatic and oil to your pan before you heat it up. Allow them all to warm up together. This will ensure maximum flavour is released into the oil and you don't have to worry about getting it out quickly before it burns
Looks really delicious, my version is very similar regarding the mix of peppers, however I use arugula to add its distinct pepper flavor and butter and parmesan cheese to finish it off, would love to try your recipe girlfriend, nice job 👍
I have fresh shrimp that hasn't been cleaned yet. I have no intention of cooking it now so I need to know if it has to be seasoned before I freeze it again. and if so, what do I season it with?
Hey, I would suggest you freeze it just as it is. It's usually easier to de-vein when it's frozen. When you're ready to cook it, then defrost it and season it

an another ting! dat celery yuh using there ha tuh be our celery, with that gorgeous dark green color. De American celery doh ha dat kind of color, because fuh one ting, dey celery ain't no celery to try seasoning any kind of seafood or meat with. The celery dey have up here is only tuh eat with ranch dressing, it ain't have enough of a flavor to season food with. Trinidad celery is potent, it ain't fuh eating with no ranch dressing! lol.
I normally season the shrimp with lea Perrin sauce oyster sauce and a bit of barbecue sauce everything else the same way you do it I find when you season and let it sit for a bit it is very flavorful.
Love your videos very simple and traditional I do my cooking the same way just a little different with a few recipes. The younger generation has great lessons to learn from you.

You did not cut the back of the shrimp to take out the veins. It is on plain sight that it was not clean. I am a caterer and would not give people food that is not clean. If you are teaching people to do things, do it right.
Debbie R Well you didn't have to eat it right? And by the way, I don't cut through the entire shell because it falls off. I cut 1/4 of an inch close to the tail and pulled the whole vein out. Have a great day, bye!
It is very clear to see that she did clean the shrimp. As a caterer you should know the method used to clean the shrimp while keeping the shell intact.
Don't you feel stupid 😂....as a "caterer" you should know you don't have to take the entire shell off to take the vein out. I'm not a caterer but I sure as hell know that much.

Yeah, It's called celery leaf. It's not the same as the Trini celery but it's similar. I usually get it on Liberty Ave.
